In our university town of Antigonish, Nova Scotia,  St. Francis Xavier University has a STRIKE going on. Briefly, it’s about wages, job security, etc. and involves professors, lab instructors and library workers, many of them friends of mine.  In the last week they have picketed in -22… MORE

About this Cook
I am a professional photographer and medical secretary who loves to cook and garden. Entertaining my family and friends with different recipes is one of my favorite pastimes. I have five sisters who are also great cooks and bakers. When I am not roaming the roads looking for great photos I am prowling the grocery stores for ingredients for my latest new recipe. www.bernicemacdonaldphotography.com if you would like to see some of my work. Cheers!
My favorite things to cook
I love to BBQ (all year round if possible). Pork, chicken and fish dishes interest me most but I am not adverse to a good cut of beef once in a while. My garden provides me with lots of fresh herbs, garlic, onions, tomatoes, peppers, leeks and potatoes. One sister has honeybees which provide us all with honey for the year. If I only had a olive tree in my backyard and a sheep to provide feta my gourmet life would be complete! Mediterranean is the way to go!!!
My favorite family cooking traditions
Christmas morning with toasted Montreal bagels topped with cream cheese, locally smoked salmon, capers and lemon zest. Who needs Santa?
My cooking triumphs
Getting into Indian cooking was a big triumph for me. Now that I have a handle on all of the spices this requires, I find it very satisfying to cook Indian on a regular basis - the aromas in the kitchen are amazing!
My cooking tragedies
Trying to make my own pasta for the first time was a complete disaster and a very big mess! I'll buy fresh from the gourmet section from now on or resort to the good ole Catelli!

Marinated Pork Medallions with a Ginger-Apple Compote
Wow, I made this last week and am making it AGAIN tonight for those who missed it! Incredibly tender and tasty! No need for 2 cups of balsamic though (especially since I only have the EXPENSIVE stuff in the house right now) - I used 2/3 cup and 1/2 cup of oil. This time I am using dried cranberries (reconstituted a bit) instead of cherries as others have done. Can't wait!

Cioppino
Awesome dish. I used fresh herbs from my garden and instead of the second can of crushed tomatoes I used 3 very large fresh tomatoes (seeded and chopped). I also increased the wine to 2 cups and didn't use any water at all. I used fresh scallops, shrimp, salmon and mussels and agree that the mussels should go in 5 minutes before the rest of the fish. Also used 1/2 chicken and 1/2 vegetable broth with a two tablespoons of fish sauce and a sprinkle of dried chilies to bump up the flavor and give it a little punch. Fished it off with freshly chopped basil. DIVINE! Serves 6 easily.

Rhubarb Crisp
I agree the butter to dry ingredient ratio was WAY off and I didn't read the reviews before baking (TSK, TSK) this recipe - very disappointing and a waste of good rhubarb!
