Best Big, Fat, Chewy Chocolate Chip Cookie

I replaced my Otis Spunkmeyer recipe with this one! Cookies are not fluffy if you like more cake like cookies I would add more baking powder. We like the flatter cookie. I didn't change a thing. Was a little buttery tasting but that's how my family likes them, rich and chewy.

Basic Corn Muffins

Vey Easy and a perfect "corn muffin" I did as another reader suggested and checked mine at 15 minutes and they were done. The only chnage I made was using olive oil because it was the only oil on hand. You could esily add other ingreients to make these 'corn, jalepeno, cheese muffins or sweet corn muffins' Thanks!! Will use again and again!

Irish Cream Bundt Cake

I didn't change any ingredients, although I couldn't find a 18.25 oun. yellow cake mix and used the 16.5 oun. box. I poked holes with a round chopstick in the top as others had suggested so the glaze would soak through the cake. Perfect!!!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Awesome flavors and presentation! It does take some playing with however. I really didn't want mine to have the black bottom look so I spooned in some cake mix and then a scoop of brownie mix and then cake mix again. This method used less brownie mix than following the recipe so I ended up with extra brownie mix that I baked off. The brownie center still ran into the sides so I think next time I will spoon in cake mix and pipe in brownie! Thank you for the recipe!

Fish Tacos

Very Easy! The family loved them! I did, however, cut my fish pieces a bit too big at first. The batter really puffs up, so I made the pieces smaller to account for the puffy batter fitting in the tortilla. I made fish roll up sandwiches the next day with xtra large whole wheat wraps, shredded cheddar, shredded cabbage and the white sace. Delicious!

Greek Pasta Salad

Made just as is except left out the onions as my husband hates them. I did substitute whole wheat spirals for the penne and used low fat feta. Was perfect! We had it with grilled kebobs, yum!

Fried Whole Tilapia with Basil and Chilies

Exactly what I was looking for! I had whole fried tilapia in an Asian restaurant once and was sure that there was something trickier than just frying it; but no there isn't! I used canola to health up the frying and fried until super crispy 10-12 min. I was in a hurry so I didn't make paste but used Asian Rooster sauce and premade garlic-chili oil. The fish is sooo much more tender this way! THANK YOU!

Perfect! I saw the calorie count and modified the following items and it was just as delicious! I used non fat sour cream, low carb whole wheat tortillas, Campbells Healthy Choice reduced fat cream of chicken soup and Tillamooks reduced fat cheddar cheese.

Cherry Crunch

Made exactly as recipe reads except I used a bag of fresh, frozen cherries from Trader Joes instead of the cherry pie filling. I let the cherries thaw and used entire bag (3 cups). Was perfect for our family as it wasn't as sweet as I think it would have been with the pie filling.

Pork Marsala

Super tender and good! I bought thin cut chops and did not pound them out due to time. I only had Cabernet wine so I used 1/2 c. Cabernet and 1/2 c. Beef Broth. Everyone loved them!!!!
