Ham, Potato, and Cheese Soup

FANTASTIC! I read the other reviews and made the following changes based on my families preferences and reviews. First I simmered a ham bone with ham (for the recipe), carrots and onion in 12 c. water for 2 hours. I removed bone and veggies and discarded. I then took out ham and chopped. I used exactly 6 cups of this broth to start this soup instead of water. I also chopped up the 2 onions very small and carmelized in olive oil before adding to the broth and ham. The rest I left intact except for substituting 1c. half & half for the 1 c. milk. I read where some reviwers didnt add the flour 'paste' and also left out the milk...I think if you don't use the flour 'paste' you wouldn't need the milk? The 6 c. broth (or water) is perfect. I used the full amount of cheese (velveeta) as this really is a HUGE pot of soup and I felt half wouldn't do the flavor justice. It was great!!!!

Fried Whole Tilapia with Basil and Chilies

Exactly what I was looking for! I had whole fried tilapia in an Asian restaurant once and was sure that there was something trickier than just frying it; but no there isn't! I used canola to health up the frying and fried until super crispy 10-12 min. I was in a hurry so I didn't make paste but used Asian Rooster sauce and premade garlic-chili oil. The fish is sooo much more tender this way! THANK YOU!

Dump Cake II

I also melt the butter on top and used one can applesauce instead of the cherries as my family isn't a big cherry fan. Delicious and Easy!

Delicious Baked Chicken Kiev

Super easy and very good! I only had 4 breasts and regular corn flakes. I made the recipe as is and the filling and flakes worked out perfect for me with 4 breasts! Thanks!

Sun-Dried Tomato Basil Orzo

We found this recipe fairly bland and doctored it up with artichoke hearts, black olives and balsamic vinegar which helped but didn't make it "wow".

Irish Cream Bundt Cake

I didn't change any ingredients, although I couldn't find a 18.25 oun. yellow cake mix and used the 16.5 oun. box. I poked holes with a round chopstick in the top as others had suggested so the glaze would soak through the cake. Perfect!!!

Baby Back Ribs

Sooo easy! I usually would have done the dry rub rub suggestion as per a lot of readers but I was pressed for time to mix up a rub. I followed the recipe exactly except I opened the foil towards the end of cooking to brown up the ribs. FANTASTIC! EASY! Thank you!

Balsamic Bruschetta

Wonderful! My son who hates tomatoes loved this. We didn't have roma tomatoes so I used 3 very large and very firm regular tomatoes. I was weary of a full T. of balsamic so I used 2 t. and tasted it - I left it at 2t. We LOVE olive oil so I used 1 T. Thank you for the recipe!

Taco Salad I

I like trying ingredients that don't seem to belong together like taco meat and French dressing. I read through some reviews and saw that some people thought the dressing made it too sweet and left it greasy. While I was cooking my burger I did think an entire bottle would be too much so I added a little less than half. I added 1/3 c. water and let simmer. It did have a 'grease film' that collected in spots which I would guess was from the oil in the dressing. We enjoyed the flavor and thought if more dressing was added, it would have been too overpowering. We enjoyed that it was a little different from the everyday norm. Thanks!!!

Super tender and good! I bought thin cut chops and did not pound them out due to time. I only had Cabernet wine so I used 1/2 c. Cabernet and 1/2 c. Beef Broth. Everyone loved them!!!!

Jay's Signature Pizza Crust

Easy to make, tastes very good just not "the best" I have had! I grilled to crusts on my gas grill and then wrapped in foil overnight as I wanted to use them in a hurry the next day and wouldn't have time to cook them fresh. I added sauce and tons of veggies and mozzarella and tossed in the oven to melt the cheese. Everyone raved about them!

Perfect! I saw the calorie count and modified the following items and it was just as delicious! I used non fat sour cream, low carb whole wheat tortillas, Campbells Healthy Choice reduced fat cream of chicken soup and Tillamooks reduced fat cheddar cheese.

Cherry Crunch

Made exactly as recipe reads except I used a bag of fresh, frozen cherries from Trader Joes instead of the cherry pie filling. I let the cherries thaw and used entire bag (3 cups). Was perfect for our family as it wasn't as sweet as I think it would have been with the pie filling.

Best Big, Fat, Chewy Chocolate Chip Cookie

I replaced my Otis Spunkmeyer recipe with this one! Cookies are not fluffy if you like more cake like cookies I would add more baking powder. We like the flatter cookie. I didn't change a thing. Was a little buttery tasting but that's how my family likes them, rich and chewy.

Basic Corn Muffins

Vey Easy and a perfect "corn muffin" I did as another reader suggested and checked mine at 15 minutes and they were done. The only chnage I made was using olive oil because it was the only oil on hand. You could esily add other ingreients to make these 'corn, jalepeno, cheese muffins or sweet corn muffins' Thanks!! Will use again and again!
