About this Cook
Busy mom working a FT+ job buts can't stand the idea of processed or fast food. I LOVE cooking and my family loves eating so it's a win-win!
My favorite things to cook
New things that require presentation! I love serving something new that looks and smells fantastic - it's like being an artist at a gallery opening!
My favorite family cooking traditions
Sitting down at the table for dinner. I have found that less and less people I know sit at the dining table to talk about their day and enjoy dinner together. Unless I work late we are always enjoying dinner on the patio or at the dining room table!
My cooking triumphs
An eggplant parmesan recipe I got from an Itlian friend. It takes 3 days to make and is so sexy on the mouth!
My cooking tragedies
Baking a birthday cake for my daughter's birthday the night before the party and something went awry and it fell all apart. Ran to Costco for a save.

Taco Salad I
I like trying ingredients that don't seem to belong together like taco meat and French dressing. I read through some reviews and saw that some people thought the dressing made it too sweet and left it greasy. While I was cooking my burger I did think an entire bottle would be too much so I added a little less than half. I added 1/3 c. water and let simmer. It did have a 'grease film' that collected in spots which I would guess was from the oil in the dressing. We enjoyed the flavor and thought if more dressing was added, it would have been too overpowering. We enjoyed that it was a little different from the everyday norm. Thanks!!!

Old-Fashioned Pancakes
Perfect Easy Mix! I was out of butter so I substituted 2 1/2 T. oil and it was great! Thanks!

Basic Corn Muffins
Vey Easy and a perfect "corn muffin" I did as another reader suggested and checked mine at 15 minutes and they were done. The only chnage I made was using olive oil because it was the only oil on hand. You could esily add other ingreients to make these 'corn, jalepeno, cheese muffins or sweet corn muffins' Thanks!! Will use again and again!
