Pinto Beans With Mexican-Style Seasonings

Alabama Fire Crackers

Hmm, I thought. But I gave these a try and wow am I glad. The only thing I changed was canola for vegetable. I have to admit that I cheated and ate a couple before letting them sit over night and thought they were too salty. However, after overnight they were not.

Mel's Crab Salad

My search for the perfect crab salad is over. I've made this several times and the only thing I've changed is cutting back the mayo to 1/4 cup. Definitely a keeper. Filed under my TNT folder.

Low Carb Zucchini Pasta

I like to call these zoodles. I used a Spirooli® aka a Paderno® to make easy work of the zoodles. I just seasoned the zoodles and sauteed in olive oil infused with garlic until tender. Great recipe.

Zucchini Soup

If you are looking for something that's not too bold for a starter to a main course this is it. I was pleasantly surprised with the results of this soup. Easy to make and healthy. I used garlic salt to taste, otherwise followed the recipe. I wasn't quite sure how to serve this warm or cold but either way it is good. Instead of a food processor I made quick work of it with my stick blender. Thank you Cassie.

Easy Mexican Sopes

You will wonder how something so easy to make can taste so good. Prior to frying I cooked each sope on a griddle for 1 minute on each side. Working on the side that was heated first and pinched the edges of the sope up to form a lip approximately 1/2 inch (the masa is still hot so work quickly). Top with your favorite taco fillings.

Paleo Cauliflower Rice

I thought this would be a little bland but I was wrong. The flavor comes through well. I will definitely be making this again. A cheese grater works well making the cauliflower into rice.

Pork Chops with Dill Pickle Marinade

Wasn't quite sure what to expect but I thought I might give it a whirl and am I glad I did. I used claussen's Kosher dill brine for the marinade. I checked the reviews and some said the chops tasted like a dill pickle. Well I suppose so with a hamburger dill brine. I found the claussen's to be milder and flavorful without over powering the pork chops. I grilled my chops and they came out juicy and tender. Will definitely make this again.

Caroline's Firecrackers

With these delectable little bites you’ll light the fuse of sweetness on first bite causing an explosion of spiciness in the end. These have been added to my recipe box TNT folder. Caroline, you were definitely thinking outside the bag with these. Since my store only sells 9.75 ounce bags of Flaming Hot Cheetos that’s what I used. Rather than trying to figure out the ratio of Cheetos to Vanilla Almond Bark Coating with the 9.75oz bag, I used the entire 20oz package of vanilla coating. This mixture spread perfectly in a 13x9 jelly roll pan, lined with parchment paper, to be cooled before cutting. As my Grandchildren would say, “They are the bomb”.

Johnsonville Sausage Balls

Definitely set the sausage out for 20 to 30 mins before mixing. I grated my own cheese and used the dough hook on my KA to mix the ingredients. I used a cookie scoop for the sausage balls and placed them on a parchment paper lined cookie sheet. The All Natural Hot Ground Italian Sausage puts these over the top. Make ahead and freeze for later.

Watermelon Fire and Ice Salsa

A five star hit at the neighborhood bbq! I should have doubled the recipe. In order to keep it from getting too watery mix the garlic salt with the chopped watermelon prior to mixing with the remaining ingredients. It will help draw out some of the moisture when straining the watermelon.

PAM® Sopapilla Cheesecake Pie

A super simple recipe using a handful of everyday ingredients. If you feel that the top crust will be a bit tricky just roll out the crescent rolls between two pieces of parchment paper to fit your baking dish. Remove one piece of parchment, place the dough on top and peel away the other piece of parchment. As a change of pace we like to drizzle caramel over the top in place of honey. If you want to impress last minute dinner guests this is it. CandelB thank you for this great recipe.

Dark Chocolate Chipotle Cookies

These cookies are great. I did triple the chipotle and they turned out perfect. I rolled the cookies into balls slightly smaller than a golf ball which resulted in 3 to 3 1/2 inch cookies. I also used parchment paper as stated in the recipe. Thank you newman'smom.
