Spicy Garlic Salmon

Great salmon recipe and easy to make. I pretty much followed the recipe except I used whole grain mustard with horseradish. This will definitely be one of my top 5 salmon recipes.

Baked Salmon Fillets Dijon

This is absolutely the best salmon recipe. Quick and easy. I didn't have Italian-style dry bread crumbs so I made my own with bread crumbs and some Italian seasoning.

Extreme Veggie Scrambled Eggs

A great recipe for beginning cooks. Quick, easy and flavorful. No knocking off stars for such a simple recipe because these eggs are great. I sprayed a non-stick pan with olive oil and cooked as directed.

Spanish Potato Omelet

I thought this was missing something liked diced jalapenos. I didn't feel that it was necessary to flip the eggs over. I just placed a lid over the pan and cooked the eggs on low heat until done.

Balsamic Roasted Pork Loin

Cooked this on the bbq grill and added garlic to the marinade. Turn out great without a vinegary taste. Simply and easy to make and turned out moist at 145 degrees.

Simple and easy to make. The turmeric added a nice flavor to the chicken along with the onions and bell pepper. Next time I'll add some different colored bells along with the green.

Vegan Black Bean Quesadillas

I'll admit I wasn't sure about a quesadilla without cheese but I so glad I tried this. The nutritional yeast adds great flavor. Served with pico de gallo. Thank you DownHomeCitySisters.

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

I added garlic salt to the avocado sauce and used a food processor to make the tortilla chips into a finer crush. I also pureed the salsa and chipotle. In order to prevent from turning the delicate fish while cooking I placed the fish on a cooling rack over a baking sheet prior to baking. This turned out great and the avocado sauce helped balance the heat.

Roasted Cauliflower Soup

After reading a couple of reviews I used vegetable broth in place of the water and cooked the rest per the recipe. I found this to be a little bland but with a few drops of hot sauce it was great.

Oh, my goodness! This is perfect. The only thing I did different was to use my Misto to spray the florets and tossed in a mixing bowl with the garlic. Definitely a keeper.
