Snow Cone Topping

Our grand daughter wanted to make snow cones this weekend so I thought I would give this a try before she brought over her snow cone making machine. This is not a thick syrup but the flavor is there and no doubt a lot less sugar. Can't wait to try different flavors with her including sugar free and she what she thinks.

Joses's Zucchini Salad

I've been on the hunt lately for zucchini salads and this is another keeper that has a dressing that complements it well. I used a Spirooli to make zoodles instead of slicing the zucchini.

Mexican Green Papaya Salad

I live near all of the ethnic markets listed above and couldn't find a green papaya so I diced up a ripe one. The brown sugar adds a nice touch to a great salad.

Cacio e Pepe e Fagioli and Stuff

This would be a good side dish to go along with a main of choice. If I were to make this again I will saute some onions to add to the mixture and garnish with crispy bacon bits.

Hearty Chicken Tortilla Soup with Beans

This hearty and healthy chicken tortilla soup with beans is filled with shredded chicken and many other flavors that blend well together for that perfect meal. We don't like our soup too thin so we added less broth.

Chilled Vegetable Salad

Easily a five star recipe! This is healthy, crisp, refreshing and it's packed with flavors of goodness. The only thing I changed was making the zucchini and squash into zoodles and sqoodles. Perfect for showing off to company or any other time. Thank you for the keeper LREYNAL.

Yummy White Bean Chili

I think I went a little overboard with the cayenne but that's OK I like the heat. The hominy throws the recipe off. Next time I'll try it without the hominy and reserve it for posole.

Indian-Style Scrambled Eggs

When I tasted these I couldn't quit figure out what was missing. I did add 1/2 teaspoon of cumin but it still tasted a little flat. Perhaps some cayenne added to the mix would help. I can say that this is worth playing with.

Stuffed Jalapenos I

Just out of curiosity I made these with both fresh and jarred jalapenos and found that both are equally good. Make plenty because these will go quick. The small end of a melon baller makes quick work of removing the seeds and membranes. The sour cream on top is OK but not necessary because it diminishes the spiciness of jalapeno.

Trail Cabbage with Cream

This is so easy to make and is a perfect side dish for spicy barbecued ribs. I used garlic salt and pepper for the seasoning however next time I may try Cajun seasoning. I also crisped up some extra bacon for garnish. Thank you cowboybob for a tasty quick and easy recipe.

Egg-Style Avocado Salad Sandwiches

I decide to make this and got halfway through only to find out I had run out of potato bread so I toasted some sour dough. This has the texture of an egg salad sandwich but the creaminess and flavor of the avocado makes this a hit. The mustard paired well with the avocado. Makes for really good sandwiches.
