Dos Queso Dip

I didn't add salt to this. There was enough salt in the taco seasoning mix. The mixture looks pink and with the pepper jack cheese the contrasting colors don't look very appetizing but it did taste OK.

No Bake Key Lime Pie

I was quite pleased with how this turned out. I did read the reviews prior to making this and I'm happy to say that I did. When I added the cream cheese into the boiling mixture it began to form into little clumps so I quickly attacked them with my immersion blender to smooth them out. I did let the mix cool before adding the whipped topping and it blended well. I use a graham cracker crust and limeade for the pie. I did freeze the pie and it turned out perfect. The first bite will be a little tart but you'll be going back for more.

Alaskan Chocolate Scrambled Eggs

I couldn't find instant white chocolate flavored coffee mix powder so I used white chocolate finely grated. I wasn't quite sure what to think and I still wasn't sure after I tasted it. The more I thought about it the more I liked the eggs. The white chocolate adds another dimension without being overly sweet. Next time I will add shredded cheese as recommended.

I didn't have Jamaican hot sauce so I subbed a thick hot sauce and garnished with green onions. I love hot sauce and cream cheese on crackers.

Apple Cider Cranberry Sauce

WARNING! This sauce is highly addictive. I have never liked cranberry sauce out of the can and just don't see what purpose it serves. Not wanting buy canned cranberry sauce I though I'd give this a trial run before thanksgiving. I'm so glad I did. This is definitely a keeper. When I was making this my wife came from a back room in the house and wanted to know what smelled so good. It does take ever bit of an hour to thicken up on a simmer but who cares, your home will smell happy, happy. Thank you mimosa.

Lumpia Mollica

This is by far the best Lumpia recipe I have tried here on AR. I subbed cilantro for the coriander (I know two completely different tastes but I prefer cilantro) and upped the red pepper flakes a bit.

Meat and Potatoes Lumpia

I don't use Lumpia wrappers. I use Menlo® brand wrappers which are a good all around wrapper. I think with this recipe you could omit the potato and add more meat and veggies. They still tasted good.
