Crunchy French Onion Chicken

I have always wanted to try this recipe and just got around to it. Figuring that the coating would be very delicate I floured the chicken before dipping in the egg and french fried onions. I also placed the chicken on a cooling rack, sprayed with non stick spray, above a cookie sheet so I wouldn't have to turn the chicken during baking and chancing damaging the coating. If you don't have a cooling rack try using sliced raw onion rings to place the chicken on. The results were favorable however I may add seasoning the flour next time.

Spicy Cauliflower Bites

This turned out good and baking them in muffin tins worked great. I did add a little more than the 1/8 teaspoon of red pepper flakes knowing that wouldn't be enough. Next time I make this I will mix in cheese to the mashed cauliflower prior to baking.

Leftover Ham And Noodles

This soup is easy to make however I subbed chicken broth for the water, used green onions, added the celery to the hot bowl for a nice crunch and used fall themed pasta for the egg noodles. This is definitely a keeper for the winter months.

Oatmeal Apple Crisp To Die For!

Being that I'm not a baker I thought what the heck when I saw this one. I decided that if The Biker Baker can make it, this old man can too. This is a stand alone good recipe, no ice cream necessary unless of course you want some.

Roasted Cauliflower 'Steaks'

So easy to make resulting in great flavor. I made the steaks as written with the only change being Mrs Dash Original in place of the salt. Even if you don't like cauliflower I highly recommend you try it roasted.

Low-Carb "Tacos"

Mojito Shrimp Lettuce Wraps

I made the mistake of halving this recipe and was I sorry. I think the wife and I could eat the full two pounds of shrimp in this recipe. These little lettuce wraps result in an explosion of flavor.

Blueberry Delight Muffins

Good thing I made these on Halloween because I was very disappointed when the muffins turned green. No doubt it was a chemical reaction with the baking powder or soda and the blueberries. The recipe doesn't state whether or not to use frozen blueberries which I will next time and yes I mean next time because the flavor was easily five stars.

Fall-Off-The-Bone Beer Can Chicken

Cauliflower Cheese

This resulted in a really thick and rather flavorless cheese sauce. Next time I will add extra cheese and thin a bit with milk. A good base for cheese sauce.

Chipotle Creme Fraiche

Perfect! The only change I would make is to add more chipotle as stated in the recipe. This worked great as a topper on our chicken fajitas. As a matter of preference I used sour cream in place of the creme fraiche.

Crispy Chipotle Roasted Smashed Potatoes

Oh my goodness these are so good. These taste like crispy fries on steroids. Cooking to deep brown and crisp is a must. The chipotle turns a dark brown but it is not burnt.

Easy Pumpkin Muffins (Low-Fat)

Just my luck and got another mind boggling formula due to manufacturers downsizing their product. So I decided to throw caution to the wind and use a 15.25 oz box of spice cake mix and a 15 oz can of pumpkin puree because that's what I had on hand. Mixed the pumpkin and cake mix together which resulted in the consistency of peanut butter. Filled the muffin cups up to 2/3rds and used a small bent/offset icing knife, sprayed with non-stick spray, to kind of smooth out the batter. Baked for 19 minutes and cooled. I had to eat three of these babies to make sure I liked them. Apparently I did. The top was firm with a moist inside. Maybe a dollop of whipped cream wouldn't hurt either.
