Coconut Curried Rice with Cashews

This aromatic rice is full of flavor, with just the right amount of spices! I used Uncle Ben's Basmati rice so the cooking time was closer to 10 minutes.

Confectioners' Sugar

I really don't know how to rate this recipe knowing that the kitchen approved version won't work, believe me, you would be whisking for days on end with still a grainy confectioners sugar. The personal recipes version states to "Mix the two until powder forms" but didn't state what to mix it in. As for the kitchen approved recipe I would give it one star for the simple reason the whisk won't work. I did a test run in a mini food processor which still resulted in grainy confectioners sugar. Lastly I used my single serve blender and the result was a 5 star perfect powdery confectioners sugar or powdered sugar as it's also know. *Update* The kitchen approved version has been updated to reflect the proper way to make the sugar and I highly suggest using a blender.

Crusty Garlic Bread

Green Avocado Leek Dip

This recipe has promise but it should be 'lemon juice to taste'. The juice of a whole lemon was too over powering. Next time I'll start with a half of a lemon. I don't think it's necessary to cook the avocado since the lemon juice will keep it from oxidizing.

Although this recipe has potential, the chili powder is over powering and the results are a dry salad. I further investigated the recipe to find out that the submitters personal recipe only called for 1 teaspoon of chili powder which sounds right.

Zippy Tuna

A quick and easy recipe with a rare combination of ingredients however they do deliver a delightful flavor. This does have somewhat of a yellow appearance so I just tell people it's yellow fin tuna. Perfect as an appetizer on crackers or on a sandwich with sliced onion. Can be easily tweaked with diced celery, onions or even jalapeno.

Best Marinara Sauce Yet

This is the perfect marinara sauce. I can't believe that I haven't reviewed this until now. I make this in triple batches with no tweaking. This is without a doubt better the day after making and I freeze the extra sauce. The wine I use is Woodbridge Sweet White by Robert Mondavi . The Sweet White helps to balance the acidity of the tomatoes.
