Family Ties Chipotle Deviled Eggs and Bacon

The combination of ingredients made some great deviled eggs. The best part of this recipe is being able to control the amount of chipotle sauce in the egg mixture. Instead of crumble bacon on top I cut some bacon into small squares, dipped them in the chipotle sauce, and place on top of the eggs.

Jacolyn's Herbed Vinaigrette

A perfect blend of ingredients. I made this ahead to allow the flavors to blend. My wife who eats salads daily also gave this 5 stars.

Amazing Muffin Cups

These turned out great. Perfect crispness on the hash browns with a butter flavor. I do think the cheese is a bit of an overload and took the suggestion of Baking Nana and cut back on the cheese. I didn't measure the cheese - just eyeballed it. Not being sure about the eggs I poured them level with the muffin tin and they looked great. This recipe turned into a perfect nonstick delight. Adding to my TNT folder.

Ashley and Whitney's Popcorn and Pretzel Sweet Snack Mix

This snack mix is truly addictive. I did thin the chocolate a bit with milk, as one reviewer suggested, in order for the mix to get properly coated. The parchment sheets made for an easy clean up. I served this mix in fry baskets lined with parchment paper.

Braised Corned Beef Brisket

Fork tender, melt in your mouth goodness. No doubt this recipe will rise to the top of the charts. No more boiled corned beef for me. This is such an easy foolproof recipe that anyone can make it and look like a star in the kitchen. I did follow Baking Nana's advice and triple wrapped it in heavy duty foil.

Bill's Beefuna Burgers

I thought something was fishy about this recipe when it was pointed out to me by happschmoopies. This was faceless at the time so I decided to give it a go. For taste I would give it five stars but for directions only 4. These definitely need a binder. Don't even try them without a binder or you will just have a crumbly mess on your hand. I noticed that some reviews said that these tasted too fishy. Well I suppose if you are using cheap tuna. Tuna shouldn't taste fishy, it should taste like tuna. I used solid white tuna packed in water to which the tuna complimented the beef. If you are looking for a juicy drip down your arm burger this isn't for you. The tuna does absorb some of the juiciness. Nevertheless a good and tasty burger. Thank you WHATS HIS FACE for something different for a change.

Karen's Rolled Sugar Cookies

These turned out good. At times I can be a bumbling fool when it comes to baking cookies so I read all of the reviews. I used a whole egg and when the dough mixture looked to be the right consistency for rolling I stopped adding the flour mixture to keep it from drying out. I used "Sugar Cookies Icing" here on AR to ice them.

Patsy's Cauliflower Salad

I made this in the a.m. and ate it in the p.m. to give it a chance to come together. I'm not quite sure what this needs but I found it to be a bit bland. Then again, what the heck do I know? I think everything needs some spicy heat. Maybe more onions and radishes. I'm not even sure what the standard is for radishes in a bunch. Oh well, I will try this again and add some diced jalapenos.

Cauliflower Fried 'Rice'

Outstanding and definitely a keeper. This recipe is so flavorful and versatile. The only thing I recommend is maybe one more clove of garlic. The cauliflower rice is spot on. Thank you John Melinte for a great recipe.

Sweet and Spicy Salmon with Grapefruit Salsa

The salmon cooked to perfection in 20 minutes. I did sub mandarin orange due to conflicts with meds for the grapefruit other than that I followed the recipe as written. Next time I may add a jalapeno to the salsa.

Pork Carnitas with Cilantro Tomatillo Sauce

The pork cooked to perfect tenderness. I made exactly as written and the only changes I would make next time would be to add a jalapeno to the salsa and cut back the chipotle chile powder to 1/8th teaspoon or even eliminate it to reduce the smoky flavor of the carnitas. I use a lot of chipotle chile powder and keep it on hand but I'm just not use to smoky carnitas. Perfect with tortillas warmed on a cast iron comal.

Easy Mexican Sopes

You will wonder how something so easy to make can taste so good. Prior to frying I cooked each sope on a griddle for 1 minute on each side. Working on the side that was heated first and pinched the edges of the sope up to form a lip approximately 1/2 inch (the masa is still hot so work quickly). Top with your favorite taco fillings.

Covered Crunchy Potato Chips

Low Carb Zucchini Pasta

I like to call these zoodles. I used a Spirooli® aka a Paderno® to make easy work of the zoodles. I just seasoned the zoodles and sauteed in olive oil infused with garlic until tender. Great recipe.

Saltine Toffee Cookies

What a great tasting recipe that's so easy to make. I did read the reviews and lined my jelly roll pan with foil and used cooking spray. One sleeve of saltines worked fine, any more and your toffee will be too thin. Toasted the pecans, used a 400 degree oven for 6 mins and when I boiled the dark brown sugar and butter I used a Thermapen® to check the temp at soft crack stage 270 - 290 degrees in order to take the guess work out of the boiling time. I will probably use milk chocolate chips next time.
