Two Big Brown Rice Waffles

I think I prefer this using carbonated water instead of the coconut milk. But, so far, that's with the egg. When I try this with an egg substitute, maybe not.

Making Crispy Onion Rings

Tried these -- delicious! I'm not one for stovetop deep-frying, though, so maybe I'll invest in a fryer gadget if I want to make them regularly. Of note -- I only had on hand some flour that was gluten-free, and I used that, mixed with a lesser amount of tapioca flour. Made a few other minor adjustments (smoked paprika, not cayenne, etc.). Regular flour may give a more even, thorough coating, but even so, they were yummy.

Holiday Cranberry Chutney

Delicious! So far, we've tried it on bread, and over basmati rice -- but I think it'd be great with anything, really! I used probably twice as much apple, and maybe just a pinch less sugar. I used 'superfine' sugar because it's what I had on the shelf. Instead of ground spices, I used high-grade (food safe) essential oils -- cinnamon bark, ginger, and cloves, just 1-to-2 drops of each.

Gingered Cranberry Chutney

I call my variation 'Cranberry-Pear Chutney,' even though so far I've only tried it with canned pears! (Still yummy.) I used essential oils instead of ground spices -- (high grade, safe) ginger, cinnamon bark, and (black) pepper oils. 1 to 2 drops of each is plenty. I think the cinnamon overpowered the ginger a little, in my version, but -- I love this mix, especially that it uses ACV (apple cider vinegar) & brown sugar.
