Shortcut Refried Beans
I forgot to soak my beans so I decided to give this a try because I really didn't want to used canned. Next time, I'll go get canned. I ground up my beans in a Ninja until they were almost powder. My beans came out looking like oatmeal. I added more water and cooked longer to no avail. I finally put the cooked beans back into the food processor for another whirl since they were softer but that didn't help either. These came out gritty. My boyfriend raves about everything I cook even when I don't think it turned out so well. Neither of us finished our servings. It was like eating refried beans mixed with sand. Not a good combo.

Mary's Sugar Cookies
Good recipe for taste. Versatile as well - I can see adding other flavor extracts in place of the almond (coconut, raspberry, etc). Once the dough chills, you do need to let it warm up slightly so that it's pliable to roll. I cut out my cookies then put them into the freezer until just before baking so that they keep their shape better. If you bake them when they're room temperature, they will spread out quite a bit and lose their shape.

Cracked Sugar Cookies I
I second the opinions of so many before me. These sugar cookies are awesome. They're delicate without being crumbly or cakey. I did not spray my pan as there is enough butter in them that they will not stick. I was afraid that if I sprayed the pan, that combined with the butter, would make them run. I rolled them in sugar so that they would have that traditional sugar coating but be sparing as they are very sweet. I also pressed them down slightly with a glass. Perhaps next time I will just sprinkle a little sugar on top rather than rolling the entire cookie. Definitely a keeper!
