Chicken with Mustard Sauce

This is a very forgiving recipe! I didn't have all the ingredients, but played around with what I had and it turned out amazing! Here's what I did: I sauteed a quarter of an onion, the added half a cup of sherry and reduced it a bit. Then I added half a cup of heavy whipping cream and nearly 3 TBS of mustard (I had stone ground mustard, not dijon) and cooked until it thickened up. Served with sauteed kale (with onion and garlic) which went really well!

Garden Fresh Tomato Soup

This was good, however, I think I prefer tomato soup recipes that use tomato juice instead of chicken broth as a base. This just didn't have the rich tomato flavor that I'm looking for.

D'Amaretti Biscotti

The flavor of this biscotti is really good, however, I agree it is too crumbly. Also, the dough spread out a lot while it was baking which made the sides get very thin and burn a bit. Makes me think this might be a bit too much butter, maybe? I used a pizza cutter to slice them which made cutting them up really easy! Also, I would really recommend watching one of the biscotti recipes from this site before undertaking biscotti for the first time.

Green Pasta + Bacon

Done it two ways: original and our modified version. You can add as many of the original ingredients as you want (the fresh basil is nice) I use whatever pasta we are in the mood for and substitute whatever green veggies we have (2 or more, sometimes frozen) including broccoli and green beans, and we add a little pan fried bacon w/ caramelized onions + salt and pepper to taste. We blanch the green veggies, strain them out, and use the same water for the pasta. A little bacon really improves the overall flavor...bacon, broccoli, and feta are a winning combination!

Strawberry Vinaigrette Salad

Ok, I can only speak to the dressing; I used my own salad recipe. The mix of lemon, vinegar and strawberry is really good! Can't say I followed the recipe exactly, though. Sorry Smuckers, I used off-brand jelly. :)

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Yum! Used half a bag of fresh spinach and replaced the cumin with rosemary. When I put the spinach in, I added salt, pepper, a little lemon, and a little more oil. Next time I would add rosemary to the pan while beans/onion are browning. Also, it was a little dry, so I might save a little bean juice to add toward the end and smash the beans a little. Served w/ quinoa, tomato, onion, lemon and cilantro, it's a super-fast vegan meal.

Pork Chops with Apples, Onions, and Sweet Potatoes

Made this in the slow cooker like first comment on page. It was a little sweet and cooking it on high for six hours made it too mushy. Next time we'll try cooking it on high for only 4 hours. I also sprinkled a little nutmeg on the top and, when it was all done, I put sage on the potato/apple mix.

Terrific Turkey Chili

Very good! We added garbanzo and black beans (3 cans total) and only half a pound of turkey. Didn't have tomato paste and we think that may have made it watery. Tried to remedy it w/ adding instant mashed potato flakes. Worked, but left stringing stuff in the chili, which was kind of gross.

Gourmet Sweet Potato Classic

Quite good! Boiled the potatoes and put everything together in advance. Used milk in place of cream. I used very big potatoes and cut back on the sugar; next time I may use more sugar. Will definitely make this again.

Oatmeal Chip Cookies

Everyone loved these! We cut back just a little on the oats and chocolate chips and added about half a cup of almonds and dried cranberries. (This was for a half batch of cookies.) Jesse says there could have been more almonds.

Vegetarian Korma

I used can of tomato juice and about 3/4 of a pureed tomato in place of the sauce. Used about 1.5 teaspoons salt. Replaced cream with whole can of lite coconut milk--boiled to reduce liquid. (This makes fat/serving about 9 grams if it's 5 servings.) Needs to preboil potatoes so they will cook faster.

Layered Vegetable Enchilada Casserole

Pretty good and easy. Jesse really liked it. We added mushrooms, black beans and a little broccoli (could hardly notice them!). I thought it was a little too wet--should drain the veggies well and not overdo the sauce. Also, next time use Hatch sauce. Should season the veggies with at least a little garlic, salt and pepper. I didn't like the corn b/c it was a little too sweet, but could have gone for more spinach and mushrooms.

Curried Coconut Chicken

Really good and simple. I used 2 chicken breast halves and added three small red potatoes and one carrot, and cut everything in very small pieces. We didn't have tomato sauce or canned tomatoes, so we cut up a fresh tomato and used a little over half a can of tomato juice. Made this way, it was a little too sweet and could have used less sugar.

Mom's Coleslaw

Used a mix of yogurt and mayo for this. Also, we only used about half of a cabbage, which made a TON, the whole thing would have been ridiculous. I added a little salt and grated onion and probably used less sugar than the recipe called for. (Not exactly sure b/c I didn't measure anything) Also, next time it would be better if I mixed dressing before adding to veggies.

Fresh Ginger Carrot Salad

I used sweetened yogurt and fresh pineapple. The ginger in this salad is pretty intense. Right after I made it, it tasted good and spicy. However, after refrigerating it for several hours, it had a bitter taste and no longer had the nice spiciness. It seems like it might be better to add the ginger right before eating it to avoid the bitterness.
