Libby's® Famous Pumpkin Pie

This is the only Pumpkin Pie recipe that my Grandmother, Mother and I use. We love it!! I am the only one who "doctored" it up a bit. doubled the spices, and added 3 tbls rum, which ever kind you prefer. I also use cinnamon whipped cream on top. Thanks Libby's!!!

Creamy Au Gratin Potatoes

This one is a great "starter" recipe. I made it for 15+ people and tripled the recipe. I added finely chopped onion, nutmeg and garlic o the cheese sauce, and layered the sauce and the potatoes. It needed a lot more salt than I anticipated. Note to sefl-more salt next time. I baked for 45 with foil on top, and then 25 more to brown without the foil, worked like a charm!

Basil Cream Chicken

Not bad, added garlic, and toped pasta with the chicken breast pounded thin and fresh chopped tomatoes. A splash of lemon brightened the Basil flavor. Added a sprinkle of red pepper flakes for a little kick, too.
