Lower Fat Chicken Vegetable Soup

There was nowhere near enough juices, I could tell from the recipe so I even added a little extra broth, it turned out like a stew, a very dry stew.

Antipasto Pasta Salad

This was the first pasta salad I have ever made. I was really pleased! I took the advice of som others and used salad dressing to save time, and wasn't thrilled by the dressing...I think next time I'll try it just how the recipe said to make it. Also, the dressing taste got milder after a day in the fridge and was great.

Kickin' Collard Greens

Fabulous!!! This reminds me of home! Based on the recommendations of others, I add a ham hock and cook in the broth for 30 minutes first ( I just used a crock pot on high to heat broth and hock while prepping everything) I also added 1T brown sugar, a few pickled jalapenos. I cook onions, garlic, then greens in pan until greens are nice and wilted and then throw it all in the crock pot on high for around 4 hours. The length of time is up to you, I usually try it to see if it's good. I think the longer it cooks the better!

BBQ Pork for Sandwiches

Great easy BBQ, it's a wonderful thing. I cook on slow for 8 hours and use Famous Daves Sweet and Zesty BBQ sauce. It's wonderful!

Mom's Best Peanut Brittle

OMG so good, it's light and easy to bite! I sent this out with our Christmas cards and already received several outstanding complements. My family is requesting more =) This was my first time making brittle. Following several reviewers suggestions and some of my own I'll sum up the helpful tips to improve the recipe which I used. I boiled a separate pot of water to clean with after cooking. Got all ingredients measured out ahead of time. I doubled the recipe (worked fine for me) and added 1 tsp. vanilla with the baking soda and butter. I used roasted peanuts so i added them in after 250 degrees. I warmed the pan ahead of time in the oven, and didn't use forks to manipulate the soft brittle, i just tired to pour over pan evenly using a circle motion (where possible). This was to keep the bubbles from popping which make it light and easy to chew. I sprinkled chocolate chips over it (about 1/2 - 1 bag =) while still warm. Then stuck it in the freezer to cool. It was a little greasy and after making this twice, I'll consider trying a parchment paper lined pan to pour onto. Also, it did seem a little sticky after drying, it would be great to know how to prevent that. Perhaps the chocolate made it greasier? All in all very easy to make, and better than anything from the store. I can't wait to make more!

Red Enchilada Sauce

This was delicious and everyone loved my enchiladas! I followed some of the advice of others and added a bay leaf, used tomato paste not tomato sauce, and used chicken broth not water.

Roasted Asparagus with Balsamic Vinegar

I love this recipe! I make it all the time. My boyfriend who is not so fond of veggies loves it too! I add feta cheese to it before baking, and do everything else the same.

Roasted Chicken Rub

Holy Smokes....this is delicious! The flavor reminds me of the traditional rotisserie chicken you get at the store, but with so much more flavor and way better. I am so happy I found this this rub recipe. I wanted to roast a couple chickens that we had raised and butchered, and you really don't want to mess up a chicken you didn't just go to the store to buy...this did not disappoint. I'll mix up a large batch to keep on hand.

Chicken Enchiladas I

Great start for a recipe, I did make the changes most others suggest. No water, subbed salsa for tomato sauce, green chiles for green bell peppers, added a little cayenne pepper, and used the red enchilada sauce recipe (from this website) instead of taco sauce. Everyone who's had them loves them! This time I am going to try adding a little cream cheese to the inside.

I love this recipe! I've made it a few times, the last few times, I thought it was a little bland, so I will try some of the others suggestions this time to give it more flavor (worcestershire sauce, garlic, etc)

Mexican Rice II

Wow I can't believe how easy it was to make this. I followed the recipe exactly and it turned out great! It was a great base recipe. The next time I tried it and added in the Taco Seasoning I(from this website * 1 tablespoon chili powder * 1/4 teaspoon garlic powder * 1/4 teaspoon onion powder * 1/4 teaspoon crushed red pepper flakes * 1/4 teaspoon dried oregano * 1/2 teaspoon paprika * 1 1/2 teaspoons ground cumin * 1 teaspoon sea salt * 1 teaspoon black pepper Adjust how you like. I just eyed the seasonings. This time it turned out delicious!

Chicken Pesto Paninis

Cooked the chicken with random garden herbs, added in some zucchini because I have a plethora from our garden. I used a different bread that came as a loaf not a round, which was fine by me. This turned out wonderful!

Soy Sauce Substitute

Made this when I ran out of soy sauce and needed it for another recipe. It was so close to the taste of real soy sauce but not quite all there (which is why I give it 4 stars). Don't get me wrong though this will do the trick and wont disappoint. I am going to make it for my mom, who is on a special diet with no soy. I need to find bouillon with no msg though.
