Ham with Pineapple

This is such a classic recipe! The only change I made was to swap the soda for the pineapple juice that was leftover from the slices. This was a delicious ham!

BBQ Glazed Homemade Meatballs

These were really good! The BBQ sauce was really simple but delicious! I did everything separate- Meatballs in the oven and simmered the sauce on the stove. Served with some fried pickles and was a great little dinner!

Chicken Chimichangas with Green Sauce

Everyone loved these! The only thing I did differently was bake them in the oven at 350, brushed each chimichanga with oil, and baked for 15 minutes on each side in a 9x13 pan. These were requested for the usual dinner rotation!

Simple Beef Stroganoff

It was such a huge hit with my family! This was a nice, quick meal to put together on a busy weeknight. I replaced the ground beef with Johnsonville's Irish O'Garlic sausages that were removed from the casing and browned and crumbled. This sausage gave this dish some amazing flavor! This has been requested for dinner again already!

Mexican Sushi

These were easy and make a great appetizer or light lunch! Surprisingly, my grocery store didn't have a good selection of flavored tortillas, but I found some cheddar jalapeno tortillas and that gave this recipe a nice kick of flavor! I also had to substitute regular refried beans for the black beans, but this was still a tasty snack!

Amazing Muffin Cups

These were so good and went very well with pancakes as a nice breakfast for dinner! These would be great to make up a batch (or two!) to have a nice brunch as well! I did not add the bell pepper as I didn't have it on hand. To get the potatoes to crisp up, after 15 minutes I turned the broiler on and just watched until they were brown. The whole family loved these!

Oat and Blueberry Muffins

These were really simple to make and very flavorful! I was looking for a more nutritious and filling muffin for everyone to grab a quick breakfast and these do just that. The only change I made was using 1/4 cup of natural agave syrup in place of the sugar. These smell great while baking and I will make these again!

Pork Carnitas with Cilantro Tomatillo Sauce

My family really enjoyed this new take on taco night! I chose not to cube the pork and placed it in my slow cooker on top of the sliced onions. I rubbed the pork with the oil and seasonings, and set it on low for 7 hours. We just shredded our 2.5 pound pork shoulder, topped with the tomatillo sauce, and piled it in a corn tortilla. It was a quick dinner on the table!

Cauliflower Fried 'Rice'

Made this for lunch for my fiance and myself and it was wonderful! Very easy to make, just a little prep work needed. I used some leftover shredded pork shoulder and just crisped it up a bit in the pan following the same steps in the recipe. This will be a regular lunch for us! I served with a baked eggroll on the side :)

Fluffy Pancakes

Oh. My. Gosh. This is THE best pancake recipe I've tried! The family loved these and have requested them again soon! The only change I made was to add a splash of vanilla extract. I also quadrupled the recipe (on accident) but glad that I did so we can have some stashed in the freezer for quick breakfast before school :) This is a keeper!

Amazing Stuffed Peppers

Really great recipe! My fiance demolished dinner! I used green peppers (what I had) and ground beef that I spiced up a bit with some crushed red pepper, a couple dashes of worcestershire sauce, salt, and pepper. Everything else was spot on! Will keep this in rotation :)

Awesome and Easy Creamy Corn Casserole

We loved this! Very easy side dish and really good! We served this with smoked pulled pork and Bbq beans. The leftovers reheated very well and had it with chili the next day! This is a keeper!!

Indian Chicken Curry II

This was fabulous!! I didn't change a thing other than adding some diced red and orange peppers and thin sliced zucchini. Served this over jasmine rice with an egg roll on the side :) Will make this one quite often- it was sooo good!

Thanksgiving Leftovers Casserole

This is like Thanksgiving shepherds pie! Really tasty and a great, quick way to bring your family the traditional holiday flavors any time of year! I used my own leftover stuffing but that was the only change I made and im sure stove top would be great too. I also made the casserole into individual serving dishes and they turned out beautiful!!

Delicious! I subbed cheddar cheese soup for the cream of chicken but that was the only change made. The whole family LOVED this and I dont think the leftovers will last long! I served with roast beef and veggies, yum!

Chiliville Chili

This is a really good chili! I like the addition of sausage along with ground beef. I did sub the beef broth with beer to add more flavor, which I always do. My only complaint is that this was not spicy enough for me, but I like really spicy. This is a great chili for a crowd since it is mild enough for everyone and then guests can add more hot sauce to their own liking! I would definitely make this again.
