Eggplant Parmesan With Easy Homemade Sauce

This was great! I omitted the red pepper flakes and had leftover breadcrumbs so i drizzled a little olive oil over the slices and breaded them again. We also had a portobello that was going bad so I chopped it, sauteed in some olive oil with garlic salt and tossed it into the sauce. Served over whole wheat spaghetti and topped with freshly chopped parsley. This is going to be added to our dinner rotation. Thanks Brenda!

Classic Cuban-Style Picadillo

This was wonderful! I added more olives (because we love olives), some of the olive brine (instead of more salt) and I didn't have any sazon so I improvised by mixing equal parts of coriander, cumin, achiote (ground annatto), salt and powdered garlic. Served with rice and fried plantains.

New England Clam Chowder I

We LOVED this after making a few changes. We served it with sourdough bread. DELICIOUS!! 1) Cook the bacon and onion with a tablespoon of butter. 2) Add 2 tablespoons of flour to the onion and bacon mixture. 3) I cut the potatoes into sticks rather than cubed them and cooked in the full amount of water, covered. 4) I added some thyme and used all of the clam juice.

Easy Batter Fruit Cobbler

I did mine with a combination of strawberries and blueberries. I was worried that this wouldn't be sweet enough since neither fruit is in season. I was so wrong! My cobbler had the perfect balance of tart and sweet. Also, vanilla ice cream on top is a must!

Chicken Garlic Pizza

I used Pillsbury Thin Pizza Crust. I prebaked the crust according to the package directions and then prepared the pizza according to the recipe directions. This was amazing!

Cinnamon-Roasted Almonds

Kalua Pig in a Slow Cooker

Couldn't find Hawaiian sea salt but found some South Pacific sea salt and used that along with Wright's Hickory Seasoning Liquid Smoke. Cooked a 3lb roast for 13 hours turning over every 3 or 4 hours. Tried turning over the last time and it completely fell apart! Shredded it up at this point and let it sit in the juices for another hour. Served with macaroni salad, King's Hawaiian Rolls and white rice. Poured BBQ sauce over the leftovers and served on a roll as a BBQ pork sandwich - these were great too.
