Strawberry Lassi

Reviewed: Mar. 28, 2010
Firstly I would like to thank Rhianna who recommended this recipe to me via RE when I posted a request for a recipe to use up some strawberries. The only changes I made was to use low fat peach yogurt in place of plain. The taste was just what I was looking for, thank you for sharing.

Pecan Apple Coffee Cake

Reviewed: Sep. 23, 2010
So easy to make, but totally delicious. I did use my Pampered Chef, round, deep-dish baker and baked in the oven for 35 minutes. I did use butter in place of the butter shortening (didn't have shortening to hand) other than that, I followed the recipe exactly. Served warm from the oven with heavy whipped cream for morning coffee today. My friend loved it just as much as I did, thank you for sharing this recipe. I know its one I will be using often!

Herb Biscuits

Reviewed: Sep. 21, 2010
These were so delicious. I did change the herbs as I wanted these to eat with an Italian dinner. I used Italian Seasoning, garlic powder, Parmesan and dried onion. I did reduce the butter to just 4 tablespoons. S simple, quick to make and taste delicious. A perfect combination!

Banana Praline Muffins

Reviewed: Sep. 13, 2010
I was a little unsure of this recipe at first, with using a packaged pancake mix in place of flour. I did use apple sauce in place of the oil and added 1 teaspoon of banana extract. I loved the praline top, but wished this flavor was all the way through the muffin. If I make these again, I think I will add a few chopped nuts to the mix to add a little extra texture. All in all a pretty good recipe, very simple and easy to bake. I did have to bake for 22 minutes in my oven, which is normally pretty accurate.

Banana Muffins II

Reviewed: Sep. 13, 2010
These were just so good. I love how the recipe uses just simple pantry ingredients. I made 15 standard size muffins and followed the recipe exactly although I did add 1 teaspoon of Banana extract and a few chopped walnuts to the top. These muffins were so moist and I just loved the crunch of the walnut top.

Monkey Bread Muffins

Reviewed: Sep. 12, 2010
Oh my goodness these were so simple to make but just so good. I followed the recipe exactly other than cutting the biscuit dough into 10 small pieces, rolling into balls and then dipping in the apple pie spice and sugar. I used cupcake liners as I have so many pretty ones in the house. (also used the apple pie spice recipe off this site). So good, I know I will be making these again. Good quick, simple breakfast for a lazy sunday morning!!!

Valentino's Pizza Crust

Reviewed: Aug. 31, 2010
Great recipe ~ I did make this a little differently by making the dough in the bread machine. I also added a tablespoon of Italian herbs to the bread machine. I thought the dough was a wonderful consistency to handle, not sticky at all. I used a hot stone, sprinkled with corn meal. I cooked the dough for 5 minutes before adding any toppings. I did have to bake for a further 20 minutes. I did enjoy this crust, but it was not as crispy as I usually like, the edge was perfect but the rest of the base a little doughy. Still a good pizza though...

Baked Mini Lemon Cake Doughnuts

Reviewed: Aug. 31, 2010
I made 12 of the standard size doughnuts. Followed the recipe exactly, only difference was that I had no buttermilk so made my own. Also added 1/2 teaspoon of lemon extract. I baked for a total of 12 minutes for the larger size. Gorgeous lemon taste and I liked the fluffy texture of the doughnuts, I will be making these again.

No Fail Pound Cake

Reviewed: Aug. 29, 2010
Oh my goodness, this cake is gorgeous. I did make a few changes, not because the recipe called for it but just to meet my pantry ingredients. I used a Duncan Hines WHITE cake mix, used 4 oz sour cream and 4 oz of vanilla yogurt. Followed the rest of the recipe exactly and only had to cook for 60 minutes. The result was one light and tasty pound cake. No one would ever guess this started life in a box!

Fabulous Orange Cake

Reviewed: Aug. 23, 2010
Gorgeous light moist cake...I did change the ingredients a little. I used a Duncan Hines Yellow cake mix, sugar free Vanilla pudding mix. I used apple sauce in place of the vegetable oil, and used a mixture of Orange Juice and Orange Liqueur (I thought my very strong liqueur would be too much). Also added 2 drops of red and 2 drops of yellow food colouring to help to bring out an orange colour.

Amish Cookies

I halved all the ingredients but followed the recipe exactly. I cooked for just 8 minutes on a Pampered Chef stoneware bar pan. The cookies just melted in your mouth and with every cookie I ate, I enjoyed them more and more...

Momma's Wine Cake

Reviewed: Aug. 19, 2010
Oh this cake is so delicious. Can't believe it comes out of a box... I used Flore de Moscato 2009 wine from Trader Joes. I must confess I did add an extra 1/4 teaspoon of nutmeg because I just adore it. The baked cake was so light and I loved the nutmeg, spicy taste.

White Chocolate Fruit Tart

Reviewed: Aug. 9, 2010
Oh my goodness this is so delicious. The only thing I will say is to check the prep time, its very time consuming. Something I never read before I started to make late one night! But its so worth it, its one of my favorite summer desserts. Followed the recipe exactly, although I left out the Kiwi (Don't like it), I did make the glaze, but only used around 1/3 of it. I will certainly be making this again and again.... Thank you for sharing.

Light Wheat Pizza Dough

Reviewed: Aug. 7, 2010
I was not sure what to expect as I had not eaten a wheat pizza base before. I followed the recipe exactly but did change the cooking method slightly. I made one large pizza, that I cooked on my baking stone. I rolled out the dough to the required shape and cooked for 8 minutes before adding the toppings (Pepperoni, Green pepper and mushrooms) and then baking for a further 25 minutes. The taste was so good, the crust was crunchy on the outside, just how I like it. Next time I am going to try the dough just using white bread flour.

Jan's S'mores Campfire Cookies

Reviewed: Jul. 30, 2010
Totally delicious.... I did make a few changes following the previous review. I used all the ingredients as written. I pressed the dough in to a mini muffin pan to cook and baked for 12 minutes. Once out of the oven I re-shaped by pressing the dough back up the sides and pushing the bottom down. I then added the marshmallows, chocolate and a little sprinkling of Graham Cracker crumbs and put back into the oven for 4 minutes.

Peach Pound Cake

Reviewed: Jul. 28, 2010
Delicious light cake, perfect for those long summer evenings. I used canned peaches as that is all I had to hand, upped the sour cream to 3/4 cup and followed the rest of the recipe exactly. I had to cook for an extra 20 minutes, of which I covered with wax paper to stop the cake from burning. I just love the texture of the cake and all those peaches.
