Coconut Cream Pound Cake

Reviewed: Jun. 27, 2012
I followed this recipe exactly, but it took me two hours to cook! The crust was so dry, but the inside would not firm up. Although I liked the taste of the inside, the overcooked crust really spoiled this cake. As written its not something I will bake again.

Baked Tomatoes Oregano

Reviewed: Jun. 27, 2012
These really don't taste anything like pizza but they are pretty good just the same. I used packaged bread crumbs but followed the rest of the recipe exactly.

Broccoli with Garlic Butter and Cashews

Reviewed: Jun. 27, 2012
I used baby broccoli and followed the recipe exactly. I didn't have cashews so used sliced roasted almonds. This recipe really made a change, from simple plain old green vegetables. Thank you for sharing.

Gold Rush Brownies

Reviewed: Jun. 26, 2012
Quick, simple easy bars to make. I needed something a little different to take to work and this recipe did the trick. Not saying its a recipe I would rush back and make time and time again but made a great one off treat.

Fluffy Peanut Butter Frosting

Reviewed: Jun. 21, 2012
What a great frosting, I used this to frost chocolate chip cupcakes. I followed the recipe exactly, not sure why some reviewers said it was difficult to handle. The key is to give the first few ingredients a good mix, which made it so light and fluffy. I'm sure I will use this the next time I need to give a cake a peanut butter kick. Thank you for sharing.

Too Much Strawberry Cake

Reviewed: Jun. 21, 2012
I made a very similar cake to this before (Lisa's chocolate cake ~ from this site). The main thing with this recipe is to reduce the oil to just 1/2 cup (1/2 cup of apple sauce also works very well). I did add one cup of white chocolate chips and 1 teaspoon of strawberry extract and one teaspoon of almond extract. I baked two of these cake for the guys at work and everybody loved it. The cake had disappeared so fast. The result was a very moist and flavorful bundt. certainly be making this cake again. Forgot to mention I used the Pilsbury cake mix.

Raspberry Cream Muffins

Reviewed: Jun. 20, 2012
I just loved these muffins. The perfect combination of raspberries and white chocolate in every bite. I followed the recipe exactly. The only negative was that out of 36 muffins ~ 10 broke when taken out of the pan. they really had stuck! Hopefully I won't have the same problems next time, as I will certainly be baking these again.

Lemon Chewy Crisps

Reviewed: Jun. 18, 2012
I'm rating this as a 4 star. while I love the taste of the cookie I did not like how flat they turned out. I also doubled the recipe and only ended up with 24 cookies so not sure how I single batch could make 2 dozen. Nice cookie, but not sure its something I will bake again.

Coconut Joy Cookies

Reviewed: Jun. 14, 2012
These have to be one of the most fabulous cookies ever. The perfect combination of chewy and crunchy. The taste is pure summer in every bite! I followed the recipe exactly, my only advise is double, triple or quadruple this recipe as the single batch is simply not enough!!! I doubled and made 24 large size cookies. As always I make dough balls and place on a baking tray in the freezer, once frozen (About 20-30 minutes) I remove from the tray and store in zip lock bags. When required bake at 350 for approx 25 minutes. The perfect crackled cookie every time. NOTE ~ I did struggle to find the almond joy pieces in my local grocery stores but eventually found them for sale at Target. Thank you for sharing this wonderful recipe!

Blueberry Corn Muffins

Reviewed: Jun. 13, 2012
These were great muffins, I followed the base recipe exactly although I did use a combination of chopped fresh Mango and Pineapple in place of the blueberries (just because they needed using up). These were delicious tasting muffins, the only negative for me was they came out of the oven flat, where I prefer a nice well risen muffin.

Butterfinger Cookies

Reviewed: Jun. 12, 2012
These were fantastic cookies, I made them for the guys at work and they just loved them. I used an organic peanut butter but did use baby ruth bars in place of the butterfinger (picked up the wrong bars at the store). The recipe certainly is a keeper!

Rosemary Lemon Grilled Chicken

Reviewed: Jun. 12, 2012
The first time I made this recipe I rated it a 2* I followed the recipe exactly as written. Firstly I think it needs to say to use melted butter, not just regular butter. I just ended up with rosemary butter knobs. I think if anything this should be tried with olive oil. UPDATE... Decided to try this recipe again using 1/4 cup of olive oil in place of the butter, and it was so much better. This time he marinade when on the chicken well, and I just loved the final taste. You really do need to use oil and not the butter like the recipe states.
