Whole Egg Mayonnaise

Mine is... OK. Looks perfect, but I think I goofed and used oil that I've had around for a bit - it just tastes funny, and not in a good way. I added more sea salt (about 1 t. Sel Gris Sea Salt) and will read more reviews, because I'm going to try again with FRESHER oil, and see what happens. Also going to get paper cups so I don't have to spend 10-15 minutes drizzling in the oil.

Chicken Lettuce Wraps

Lots of flavor, very healthy. We're empty nesters, and this was great as leftovers - just threw some mixed greens in a bowl, tossed with a light oil-based dressing and topped with 3/4 cup of this mixture. Wonderful!

Marinated Pork Roast with Currant Sauce

Made this for an impromptu dinner party and it was a hit. I didn't have time to marinate it, so I just browned it in olive oil on all sides, seasoned it with course black pepper, and continued with the rest of the recipe. Couldn't find currant jelly w/o corn syrup (dau is allergic) so I used Thomson's TwinBerry Preserves (raspberry/blueberry) and it was still wonderful. So simple! Served it with green beans, steamed cauliflower, and red potatoes.

Chile-Cocoa Rubbed Pork Chops

My favorite rub for pork - I've never made a mole-type rub before, you don't even taste the cocoa as chocolate. Wonderfully juicy.

I used 9 eggs and extra cheese, but this still seemed a bit dry. Next time I'll put cheese on top and make a sauce or something. I used sausage, mushrooms and onions also.

Had this for New Years morning, with a sweet bread from our favorite bakery and a slice of egg casserole. So pretty! I used honey instead of white sugar, and totally forgot the butter - didn't miss it.

Christmas Brunch Casserole

I thought this was good, but a little dry. Will top with cheese next time. I sprinkled it with ground ancho pepper powder, gave it a really nice color! Also added thyme to the eggs. We made half with sausage and bacon, and the other half with sausage, onions, and mushrooms. Also layered half of potatoes first, then meat/veggies/cheese, then rest of potatoes. Also used 9 eggs.

French Toast Casserole Made in Heaven

I made this for family when we were visiting and it was a hit! Real maple syrup seems to be a key. I will be sure to use a bit more than 1# of bread next time, this one came out a bit mushy in the middle - but delicious none-the-less. Try spooning the egg mixture onto the bread to prevent it running over the edge. I would love to make it with craisons and almonds next time - and the spice recommendations from previous reviews sound yummy, too. We actually LIKED the "clumps" of cream cheese - came out rather like a cream cheese danish. I've also had good luck with using whipped cream cheese, and spreading it on the slices of bread before cutting it into cubes. I'll be making this for one of our next faculty meetings, they'll love it!
