Annie's Fruit Salsa and Cinnamon Chips

Made this today for the office, hands down, everyone loved it! Absolutely delicious. The chips are a bit time consuming, but worth it.

Pizza Salad II

This recipe was phenominal! I brought it to work, and everyone raved. The only adjustment I made was I omitted the mushrooms, as I don't care for them. I'm sure I'll be making this again soon! Thanks Tony.

Cool Cucumber Salsa

Great recipe. I used 4 jalapenos because everyone in the office loves spicy food, and I doubled the cilantro and omitted the parsley. I also used 4 tomatoes to give it more red coloring. I will certainly make this again.

Okra and Tomatoes

I love this recipe! 14.5 oz of tomatoes didn't seem like very much once I had the veggies chopped; luckily I had another can so I added that. I also only used 1/2 the amount of okra and it was more than enough. I recommend Del Monte brand stewed tomatoes, Cajun Recipe. It adds a nice hint of spice :) As other reviews suggested, I served this with white rice for a bigger meal. I will be making this again!

Cheese-Stuffed Jalapenos

This was a fun snack to make. I only used 15 peppers, and I regret it-they were all gone within half an hour! I omitted bacon, and they were fine without it. I boiled 10 of the peppers for about 4 minutes, and the other 20 peppers I left as is after seeding them. I had a nice mix of mild peppers, and some spicier ones. I've been requested to make this again real soon, and of course, I plan on it.

Sauerkraut Salad

Wow, tangy is right! I love sauerkraut, but the cider vinegar seemed to overpower it a little too much. Next time, I'll use a bit less than 1/4 cup. *edit* I took this to work, everyone raved. Some begged me for the recipe, too. So, although I didn't care for it at first, other people couldn't get enough of it.

Corn Dog Muffins

I wasn't too thrilled with this recipe. After reading other reviews, I alternated the batter, then hot dog, and batter again. I also sliced the hotdogs length-wise, and then cut "half moon" slices. I ended up making mini-muffins, which was a perfect size. However, they took about 25 minutes to cook, (I'll blame my old oven on that though) and out of the 4 muffin trays, 1 was cooked perfect, 2 were not even close, and the fourth was almost burnt. Even though I sprayed non-stick spray vigorously, the muffins still stuck badly to the tins. I might try this again sometime.

Okra Patties

These were great! My coworkers enjoyed them as well. I added some Creole seasoning to the batter, but I think next time I will spice these up more. Either way, this recipe is a keeper!

Salsa De Tomatillo

Wow! Incredibly delcious! I added a Poblano pepper to this, and used three canned jalapenos because the store was completly out of fresh! I was surprised. Nonetheless, this turned out great.

Shirazi Salad

This was very delicious, but I felt it was missing something. I think next time, I'll add feta cheese to it, as other reviews suggested. *9-19-07*EDIT: I made this again, this time topped with feta cheese, mint leaves, and some parsley. This makes all the difference! So delicious, try it!

I'm glad I picked to try this recipe today; the temperature hit 97 degrees and the salad was so refreshing. I did add extra dressing, as I'm a huge fan of Italian. This will be a regular summer dish to make. Thanks.

Tomato-Celery Salsa

This was pretty good. I used a can of diced tomatoes, which i threw in the food processor for a few seconds to give it the tomato juice consistency. I omitted the flour, since the diced tomatoes were still thick enough to make this a good, chunky salsa. I also added a pinch of dill weed. However, the next day, it began to lose it's flavor, so I can imagine it doesn't keep very well in the fridge. Not a bad salsa substitute, thanks.
