Well, one of my avocados was bad, so I only had one to work with. It also hindered much of the avocado taste. Not the recipe's fault, I know. I'll have to give this one another go. Thanks!

Tuna Macaroni Salad

This was fabulous! The bf devoured this in no time. I used a bit more celery, salad dressing, and dried onion flakes instead of a fresh one. Also, I just made the pasta, drained, and mixed it into the rest of the ingredients (didn't feel like waiting). This will be added to my regular rotation, thanks!

Beer Lime Grilled Chicken

Holy moly, this was FABULOUS!!! We aren't allowed to have grills in our apartment complex (yet everyone pretty much does anyway!). So, I had to improvise. I browned the chicken on the stove for about 6 minutes per side. Then, I added the delicious marinade to it, and let it simmer for about 10 minutes. I made sure I pierced the chicken while marinating, and I pierced it again a few times when it was on the stove simmering. It was PERFECT! I also added chili powder and cumin to the marinade (about 1 tsp each). I also probably used more honey than called for, and omitted the salt and pepper. I'll be making this again, no doubt. Miso Soup

I really liked this, but I couldn't find the granules anywhere, so I had to do without. So, my soup was very basic and a bit blank (my fault). I will try this again, and see if I can find those granules.

I just made this for breakfast (yes, breakfast), as I am tired of egg dishes, and we don't have much else here. I left out the butter, and used swiss cheese instead. It's an interesting combination. I used jalapeno mustard on the side as a "dipping sauce."

Chorizo Stuffed Bell Peppers

I loved these~! I left out the salt and the cheeses, but substituted shredded pepper jack cheese instead, used Minute instant rice because that's what I had on hand, and the parsley and basil were dried. Oh, and I used tomato sauce instead of the peeled tomatoes.

Spicy Chicken Soup

After reading the reviews how it wasn't too spicy (and knowing my ability to handle fiery foods), I kicked things up a notch by seasoning my chicken with red pepper powder (I didn't have precooked chicken, so my soup took a bit longer to make). I also sprinkled about a teaspoon of red pepper flakes over it while everything simmered. Finally, rather than using the diced tomatoes with chiles, I used 1 fresh roma tomato, and diced an entire jalapeno (keeping the seeds and ribs). The end result? Deliciously spicy and savory. Thanks to the low calories, this will be kept in my regular rotation. Thanks, Kathleen!

Minute® Rice Breakfast Rice

This was okay. It's my fault though, as I don't like raisins, didn't have chopped nuts or apple juice, so it was just the yogurt and rice and cinnamon. I couldn't find the apple nonfat yogurt either, so it was just plain vanilla. I'd try this again with the flavored yogurt, and figured out what I could use in place of raisins. Thanks.

Stuffed Cabbage Rolls

I liked these. However, I didn't have eggs! So, I had to make do without the one, but they still came out alright! I used ground sirloin instead of beef, 'cause it's what I had on hand. While everything simmered, I threw a dash of red pepper flakes over it for a slight kick. Delish! Thanks, Judy.

Quick Tomato Sandwich

This was good. A lot like a BLT, minus the bacon. I used shredded lettuce and canned diced tomatoes, both were leftovers I needed to use up. I left out the salt, but other than that, I didn't change a thing.

Barley Lime Fiesta Salad

Mmmm, delicious! I omitted the chipotle pepper, instead added some thai peppers I grew from last summer and had frozen, instead of corn syrup, I too used honey, and instead of white vinegar, I used rice wine vinegar. I let this sit in the fridge overnight, and it tasted fabulous as a light lunch right now. Oh, I also left out the salt (of course), and onion powder (didn't have any on hand). I'll be making this again, thanks Christine!

Sloppy Joses

These were awesome!!! To make them more "Jose-ish", I used about 1/2 the amount of ground beef (instead using ground sirloin), but then adding two sticks of chorizo. I omitted the corn, and topped with a bit of mexican style shredded cheese. I also added a teaspoon of cumin. The boyfriend said "this is a definite do-over." (I think he meant "do again!" He was in a slight food coma after polishing off two bowls of this). Thanks for the great recipe!

Chickpea Salad II

I really liked this! I had to use rice vinegar, as I didn't have balsamic on hand, but it was really quite good! I left out the salt and cheese, but I thought it was great. Normally I don't like chickpeas (unless I'm eating hummus), but I was surprised how tasty this was. Thanks, Karkles!

Pita Chips

I liked these! I was looking for ways to use up some pita bread I had, and this was perfect. I don't have a brush, so I just drizzled the oil over the pita triangles, and then sprinkled the seasoning. (not the chervil, I don't have any). Thanks, Dawn.
