Tuna Fish Pea Salad

I made this a few months ago but forgot to leave a rating. Leaving it 5 stars due to the fact that this is SUPER easy to whip up, and could feed a crowd or potluck easily! And my, is it yummy! We ate it with crackers, but this is versatile! Thank you!

Chicken with Lemon-Caper Sauce

I give this 5 stars because it is delicious if followed to a T, but also has lots of wiggle room! First time I made this, I made it exactly as recipe stated. Second time, I realized I didn't have white wine and went the chicken broth route as some people suggested - it was good! I do prefer with wine though. The next time I make this, I will follow another suggestion to add spinach to get some yummy wilted spinach in there. That sounds good! You can decrease the amount of flour for sure, but for the people saying to decrease butter I don't really think it's necessary ;) Overall, this will be a keeper in my chicken dish rotation. LOVE this. For people who are not fond of tart flavors that come with lemon juice and capers, this may not be tasty. but I loved it.

Eggplant Pizzas

This was actually super delicious! I wanted to make a meatless meal for my family and this turned out great! I am not very familiar with eggplant, but now I like the stuff. Just make sure your oil is HOT enough before putting the eggplant slices in, my first couple of pieces were soaked in oil and it wasnt hot enough - my bad! On top of the mozzarella I placed minced red onion, sweet baby peppers and garlic. Yum yum! Mine only needed about 6-7 minutes in the oven, they were just so wonderful! Will definitely make again.

Sonora Chicken Pasta

I agree, to the people who "cant get over the Velveeta taste".. Well, this recipe is not for you! I found this recipe after looking for something to cook to use up my chunk of processed cheese food. (Not Velveeta brand, either.) I had to halve the recipe b/c I didn't have a pound of the stuff, in fact I didn't even have 1/2 pound but I improvised. I added a mexican spice blend to the cheese sauce (the fresh stuff you squeeze out of a tube) and it gave the sauce such an intense, good heat! I will definitely make this dish again if I come across Velveeta that I need to use up. I would even feed this to guests, it was delicious!!! Overall easy recipe to tweak or add to if need be, so don't worry if you don't have all the ingredients down to a T. I would suggest trying to make the sauce spicy or at least mild, it takes away from the processed cheese flavor that so many people don't love.

Lemon Pepper Chicken and Gravy

I basically followed this recipe to a T. I halved the chicken but kept the bell pepper amounts same. Only had one packet of gravy. 2 packets would've been nice but 1 is definitely enough! The end result was a very light tasting treat compared to what I usually tend to cook. I served this with rice. My S/O is a cheese lover and I was really happy to find a recipe that he thought was delicious ... WITHOUT CHEESE! :) I did end up using a little bit of corn starch to speed up the thickening process, but altogether this is a great recipe and I will make it again. It's pretty inexpensive to prepare also!!

Sausage Pasta

I followed this recipe exactly, except that I had a bag of fresh spinach on hand, not frozen spinach. It was SO delicious. To some, it may appear to be a little bit of work but I promise it is well worth the effort! My boyfriend and I were gobbling this down, we cannot help it, it's so delicious. One of our favorite dishes is a broccoli and sausage pasta (VERY similar to this recipe, and can be found on allrecipes) this recipe has a different twist to it, but they are equally delicious. Makes even better leftovers, too.

Honey Roasted Carrots

What an easy and tasty way to prepare what could be a boring vegetable for a side dish! I agree that the mixture should be mixed in a ziploc & foil should be used on your pan for easy clean-up. But the recipe followed exactly comes out delicious.

Creamed Spinach

This really wasn't bad. Spinach was on sale for dirt cheap so I had a bunch to cook up. I found this recipe to be tasty and simple, maybe a little runny but I guess that's how it's supposed to be? Boyfriend ate it, but he wasn't raving or anything. I would say spinach lovers will like this, and spinach opposers most likely will not. Will make again if I have hordes of spinach in my fridge again! :)

PJ's Sweet Potato Mash

My boyfriend gawked at the horseradish but I'm the type that has to 'stick to the recipe'! Sure am glad I did! I will DEFINITELY be adding this to my rotation of side dishes to cook at home! Yummy and healthy as well! Also; I did not have heavy cream so I used milk. Will want to try with cream next time but I'm sure it's delicious either way.

Balsamic Vinegar and Ginger Bok Choy

I cooked with bok choy for my first time using this recipe! I did not know if what I had was "baby" bok choy, but I had 2 heads so I halved the entire recipe. Also had no capers, they're a bit pricey for me to use. Regardless, this recipe tasted great! I used it for a Meatless Monday dinner and fried up some veggie egg rolls to go with. Boyfriend and I finished our plates, and I am definitely game to cook bok choy again! Did not find this too vinegary or slimy like other reviews state. I think fresh ginger really helped make this dish. If you don't cook with it a lot, it's OK. At the grocery store, just break off a piece in the size you'll need.. You don't have to buy the whole root that you see. I get a piece that is smaller than 1 inch, costs me less than 50 cents and I can make a couple dishes with it usually! :)

Caribbean Crabmeat Salad

This rating may be due to the fact that I did not have imitation crab meat and so I used the canned stuff. It's a little less than the recipe calls for, and I'm sure I'd have loved this salad a lot more if it were meatier. So taking that into consideration, I still felt this salad was lacking a little bit of something. It was definitely a pretty dish and visually appealing. Maybe if it had a little more "dressing" or "sauce", I found that my salad was a little dry after refrigerating overnight to soak up the flavors. I would make this again if I find myself with a bunch of imitation crab meat! But until then, I don't think the work that mangoes require to prep is worth it! :)

Cucumbers And Egg Salad

This was a great variation of the usual egg salad! I loved it, very chunky and flavorful and light[er than usual egg salads]... Mine seemed a LITTLE on the runny side, due to using the cucumbers, but next time maybe I can chop the cucumbers and lay the pieces on a paper towel before mixing. Will make this again.

Pasta with Asparagus

Didn't have mushrooms, and besides, boyfriend dislikes them, but the rest of the recipe I followed exactly. This was very tasty and I made this for our weekly "Meatless Monday" dinner. It was a bit on the simple side, but again very delicious. Careful with the red pepper usage.. I think I may have accidentally used more than necessary, it heated up the dish a lot. I will make this again, and next time use a little less red pepper.

Breaded Brussels Sprouts

A nice way to prepare brussels sprouts! It made a great side dish to my dinner, unfortunately my breadcrumbs were a bit stale so hopefully next time it tastes much better! I give it 5 stars because I am confident that if my breadcrumbs had been fresh the dish would've been tastier!

Southwestern Pasta Salad

This was a great, adaptable dish to cook! We did not chill it; ate it warm for dinner and then ate the leftovers chilled later like a "salad". I'm pretty sure I followed other reviews and used a little less oil, added some onion and I used chicken in mine for some meat substance. I would totally make this for a potluck, it makes so much food!

Bacon Turnip Mash

I was eager to open my kitchen up to seasonal produce, including turnips, even though I'd never cooked with them before. This recipe was super easy to complete and we were rewarded with a tasty and [somewhat!] healthy side dish to our dinner! My boyfriend told me I could make this again so I definitely will be; thank you for introducing me to the world of turnips with this wonderful & easy recipe! It gets 4 stars because it seemed a little runny, even after letting it go on the stove for much longer than the stated cook time; maybe my fault.. so I will cook the turnips differently next time and see if I can get them to be a little less watery!

Ugly Duckling Cake I

I really enjoyed this tasty way to use a can of fruit cocktail (which is how I found this recipe.. I looked up things that utilized fruit cocktail) and I would make it again in a heartbeat! As a coconut lover, I thought the crunchy frosting/brown sugar combo was sooo delicious against the soft cake. Thank you for sharing.

Chicken Tortilla Soup I

I like that this recipe is easy to alter to your own tastes. I did not follow it to a T but stayed darn close to the original. Didn't use hominy or avocado, lessened the oregano, and used about 6 cups of homemade chicken broth! Boyfriend has been raving about this, and I enjoy it very much as well! What a good way to clear out your pantry! Makes delicious leftovers too. I definitely simmered my soup for at least an hour, I can't imagine cooking any sort of soup for only 20 minutes.
