It's Chili by George!!

This is the only chili recipe I use! I don't alter the recipe to suit my taste, but rather to what's in the pantry. My favorite changes are doubling the spices except for cayenne, adding a can of diced tomatoes, and using dried beans that I soak. I think the chili is great with or without the tomato sauce or less tomato juice; it's just so versatile! I usually make this on the stove, but there have been weekends where I set up the crock-pot and the whole house smells wonderful!

Greek Pasta Salad I

Very nice salad with a few changes. The dressing was very tangy so I added a bit more olive oil. I also left out the mushrooms because of personal preference. Since I didn't have any pepperoni or macaroni on hand, I substituted deli sliced smoked ham meat and rotini pasta. The ham added the same saltiness as the sausage would.

Best Chocolate Chip Cookies

Almond Strawberry Salad

Delicious! I was concerned about the vinegar because my mother-in-law is allergic, but it turned out great! Everyone loved it including my husband who usually doesn't eat salad or fruit. To get the perfect slice on my strawberries I used an egg slicer after chopping off the tops.

Salisbury Steak

I had no issues with this recipe! The only addition I made was adding onion to the ground beef, but that's something I do for everything I make. The ketchup does give its own flavor, so it you aren't a fan of ketchup, omit it. The patties didn't fall apart too much as long as I allowed them to brown on each side before attempting to flip, and instead of a metal spatula I used a heat safe icing spreader. It didn't rip at the meat like my metal spatula did.

Peppermint Brittle

This was a hit as a stocking stuffer! Instead of buying a bar of white chocolate, I used the morsels and melted them according to the package directions. It did turn out a bit sweet for me, but I'm not a huge white chocolate fan. Next time, I will take the suggestion from others and add some semi sweet chocolate to the mix.

Lemon Garlic Tilapia

I made this twice using some variations. The first time, I squeezed fresh lemon (used half of a lemon for 4 filets) instead of using bottle juice, and used pre-minced garlic. I also substituted extra virgin olive oil in place of the butter. The lemon seemed to hide most of the fish flavor. The second time, I used bottled lemon juice, and it tasted very fishy. Overall, this is a simple baked fish dish, and I will continue to make it with squeezed lemons or lemon slices on the filets.

Artichoke & Spinach Dip Restaurant Style

I was looking for a recipe that could match what I found in our favorite restaurant, this did it! I use half of a can of quartered artichoke hearts (chopped after taking them out), and pre minced garlic.
