Oven Baked BBQ Ribs

These were excellent. Only change I made was to add some hot sauce. Meat fell off the bone. Beautiful tangy flavour. This is my new rib recipe to use all of the time.

Krystal's Perfect Marinade for BBQ or Grilled Chicken

Sensational! Followed the recipe to the letter and it was fabulous. Not too salty or too sweet. Marinated 4 poussin (small chickens) overnight and baked them for 40mins. Absolutely perfect.

Mushroom Chicken Cacciatore

Great casual dinner. Made 2 changes. Added some bacon and used fresh mushrooms. This is a dish you can add too or substitute different herbs and spices. Yes, there is a bit of sauce but if you want you can thicken it , but it is great with pasta, mashed potato or even rice.

Russian Beet and Potato Salad

Great recipe. I used mayonnaise instead of the vinegar and oil and added some finely sliced dill. It was excellent and everyone cleaned their plate!

Easy Omelet in a Bag

Great for camping. Quick, simple and nourishing. Checked out the zip loc site re: toxicity of the bag. To be honest you would have to eat a lot of food, cooked in the bags to be affected. No BPA's or dioxin. I will still cook this way. If you can microwave in it, it's OK. Sometimes I think there is too much scaremongering about cooking methods and different foods.

Beet and Cucumber Salad

Great basic recipe. At the risk of being jumped on by the 'review police', I did make a few changes to suit my family's palate. Mixed it with smoked trout and a touch of horseradish. This then became a light meal for lunch, not just a side. Good recipe, easy to prepare and very tasty.

Paddy's Chile Verde

We don't have fresh tomatillos in Australia, so I had to use canned. I also didn't have lager so I used beef stock. A few little changes but not too many. It was fabulous! I served it with a bean and avocado salsa and brown rice. Husband loved it and took the leftovers for work the next day. Great meal to do in the slow cooker, absolutely delicious.

Hoisin-Glazed Salmon

This was FABULOUS! Will definitely cook this again and again. The flavours were strong but did not take away from the salmon. By baking the salmon it remained very moist. This is not spicy but it is very flavoursome. All of the family loved it and we even had some cold as leftovers the next day. 100% great.

Southern Spicy Fried Chicken

This was the best and crispiest fried chicken I have had. Better than any restaurant. The chicken was moist and the coating did not come away in the pan. I cooked it in my grandfathers cast iron chicken fryer with a mixture of vegetable oil and duck fat. The flavour was amazing. Even the leftovers tasted great.

Canadian Maple Rice Pudding

Lamb Tagine

Excellent flavours. Very hearty and filling. Great for a winter dish. I have also made it with goat and was also very tasty. Plenty of leftovers and actually tastes better the next day.

Chicken Enchiladas

Everyone in the family LOVED this quick and easy dinner. Simple to make and lots of flavour. I made it a bit more spicy for my husband by adding jalepenas to the olives. Lovely creamy consistency. Will definitely make this again.
