Asparagus Soup II

A great recipe. The rice makes it thick and it has a creamy texture even though there is no milk or cream in it, which I prefer. I didn't strain the soup but blended it with a stick blender until smooth and thick. This keeps all the fibre in it. I also used chicken stock instead of water for extra flavour. Husband even enjoyed it chilled as a summer soup with a sprinkle of parmesan cheese.

Pistou Soup

This is an absolutely fabulous soup. The garlic in the basil pistou adds a real kick, almost like chilli. You can also change the vegetables to what you have in the fridge and I omitted the pasta and potatoes (husband is on a low carb diet). I added turnip, broad beans and only added one can of white beans (all I had). Filling as a meal (2 bowls) or a great first course. Serve with fresh crusty bread...yum.

Kale Salad with Pomegranate, Sunflower Seeds and Sliced Almonds

I thought kale would be bitter, but it isn't. Very fresh salad with a great texture and flavour. Very good if you are dieting.

Dawn's Kale Side Dish

This was absolutely delicious. Had never eaten kale before and was pleasantly surprised. I didn't add the cashews as it was salty enough and I don't need the extra calories. I did add a rasher of bacon instead. Added a great smokey flavour to the dish. Currently on a high protein low carb diet and this was perfect. Served it with baked salmon and mashed celeriac.

Greek Lentil Soup (Fakes)

My mother made this for me when I was a child. It brought back so many memories. Now I can make it for my family. I used lemon juice instead of vinegar because that was at hand and drizzled a little extra virgin olive oil as well, a really good quality, so for flavour only. Great recipe.

Great recipe. I also fried fish, oysters, asparagus, mushrooms. Beautiful crispy batter. I fried them in rice bran oil, very clean flavour.

Hoisin-Glazed Salmon

This was FABULOUS! Will definitely cook this again and again. The flavours were strong but did not take away from the salmon. By baking the salmon it remained very moist. This is not spicy but it is very flavoursome. All of the family loved it and we even had some cold as leftovers the next day. 100% great.

Great tasting coleslaw. The dill and horseradish really give a different flavour and a nice kick. Makes a good accompaniment to salmon or pork chops.

I used minced cooked lamb (traditional). This was a great recipe. Very tasty and quick to make. The Worcestershire sauce adds a nice buzz. Great quick dinner from leftovers.

I used puff pastry and fresh pork sausages. Very Tasty and quick to make. I think a lot depends on the type of pastry and sausage you use. Batter quality gives a better result.

Mexican Bean and Rice Salad

This was delicious. I used fresh corn instead of canned (just because I had it in the fridge). Everything else was exact. Great family salad, very healthy. Rice adds body and fills you up, beans are so good for you. Lovely fresh flavour.

Tomatillo Soup

Very tasty. I added a few extras....kidney beans, char grilled corn, some tomato and jalepenas. Had to make it go a bit further! It is a great main course soup. Next time I might even add a little rice to thicken a bit more, but it is an excellent soup.

Southern Spicy Fried Chicken

This was the best and crispiest fried chicken I have had. Better than any restaurant. The chicken was moist and the coating did not come away in the pan. I cooked it in my grandfathers cast iron chicken fryer with a mixture of vegetable oil and duck fat. The flavour was amazing. Even the leftovers tasted great.

Beef Burgundy II

A beautiful Beef Burgundy. As good as I have had even in France. The meat was very tender, it also pays to use a good wine. I used the same as we were drinking with the dinner. Instead of adding the potatoes I made a creamy mash and it went extremely well with this dish. You will enjoy this dish very much.
