Zippy Shepherd's Pie

I used minced cooked lamb (traditional). This was a great recipe. Very tasty and quick to make. The Worcestershire sauce adds a nice buzz. Great quick dinner from leftovers.

Sausage Rolls

I used puff pastry and fresh pork sausages. Very Tasty and quick to make. I think a lot depends on the type of pastry and sausage you use. Batter quality gives a better result.

Mexican Bean and Rice Salad

This was delicious. I used fresh corn instead of canned (just because I had it in the fridge). Everything else was exact. Great family salad, very healthy. Rice adds body and fills you up, beans are so good for you. Lovely fresh flavour.

Tomatillo Soup

Very tasty. I added a few extras....kidney beans, char grilled corn, some tomato and jalepenas. Had to make it go a bit further! It is a great main course soup. Next time I might even add a little rice to thicken a bit more, but it is an excellent soup.

Southern Spicy Fried Chicken

This was the best and crispiest fried chicken I have had. Better than any restaurant. The chicken was moist and the coating did not come away in the pan. I cooked it in my grandfathers cast iron chicken fryer with a mixture of vegetable oil and duck fat. The flavour was amazing. Even the leftovers tasted great.

Beef Burgundy II

A beautiful Beef Burgundy. As good as I have had even in France. The meat was very tender, it also pays to use a good wine. I used the same as we were drinking with the dinner. Instead of adding the potatoes I made a creamy mash and it went extremely well with this dish. You will enjoy this dish very much.

Black Bean Salad

Excellent salad. I didn't have Italian dressing and used lime juice and a little olive oil. Very tasty and healthy. I am always asked to bring this along to BBQ's.

Kansas Baked Beans

After paying $13.00 for baked beans in a cafe, I decided to make my own. These tasted better than the cafe beans and were a fraction of the price. Great for breakfast or lunch. Also good with ribs at a BBQ. I didn't have any beef and left it out, still was great and very filling.

Australian Damper

This is not a traditional style bread. It was made by our early settlers from whatever they had on hand and could carry on horseback. Don't try to cut this loaf like regular bread, instead pull it apart while it is still warm, put on heaps of fresh butter and golden syrup.......yum. Best cooked over coals in a camp oven, but I make it all the time at home in my regular oven. You can also add grated tasty cheese and sliced olives for a savoury damper. Great at a BBQ. It only keeps a short time though, it is dry and hard the next day.

Chicken Satay with Homemade Peanut Sauce
