Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Reviewed: Oct. 1, 2014
Simple, fresh and tasty ingredients. Only sub was fresh basil. Next time will make with either chicken or boneless pork. I seared chops in pan, then put in a 350 degree oven, turned temp down to 300, and baked for as long as it took to make some rice to go with it. Pork was tender and tasty. Wish the onions had gotten a little softer, but that's just personal preference.

Cajun Crawfish and Shrimp Etouffe

Reviewed: Nov. 12, 2013
Used half EVOO and half butter first time and burnt the roux. My fault. Used half butter and veggie oil second time and was perfect. Added back fin crab meat (blue crab) because didn't have enough crawfish. Subbed Vegetable stock for fish because hubby allergic. Was delicious. Served with 12 splashes of hot sauce, plus more at table. Perfect heat/flavor balance. Can't wait to make again!

This was good! Topped with butter and pizza seasoning and that really made it delicious. Was so yummy! Boys loved it and was good to take to school next day in lunches.

Slow Cooker Salisbury Steak

Reviewed: Apr. 29, 2013
Too salty for my taste, will be making my own onion soup mix from now on. Kids liked it-said it tasted just like school-not sure if that's a good thing, but would make again.

Sausage Pasta

Reviewed: Mar. 18, 2013
Simple, tasty and great way to get kids (and husbands) to eat more veggies and like it. Have made it several times and given it to friends following surgery, and it is VERY good! Have always made it exactly as called for, which is highly unusual, but love the possibilities!

Chicken Milano

Reviewed: Mar. 13, 2013
Holy Smokes! This was A-mAZing! Made with 1 cup wine, 1 cup chicken broth, 1 cup cream, about 1/2 cup parmesan. Was perfect! Might not add the full amount of tomatoes again, just for personal preference. The cheese really added to the overall texture and held it together well, plus created a yummy saltiness that was to die for. Even picky 5 and 7 year olds liked it. Would make a great meal for family or friends, but needs to be served HOT. Try it! You won't be disappointed

Savory Crab Stuffed Mushrooms

Reviewed: Feb. 3, 2013
I don't get it. I love crab, like mushrooms, but this was tasteless! Seriously. Glad I didn't waste a whole pound of crab on it. It was flat, weird textured, and boring. Seriously bummed. I made it exactly as written, even though a big part of me wanted to change/add something. I'm a good cook, but wouldn't waste the ingredients trying to improve this one. To initial poster, I'm sorry, I wanted to love it, but it just didn't work.

Jan's Pretzel Dogs, without a bread machine

Reviewed: Feb. 3, 2013
A-mazing! We used Nathan's beef and cheddar dogs and everyone from my 4 year old to my 64 year old dad loved it! I didn't have a bread machine so kneaded it by hand for 7ish minutes. Took longer than an hour to rise, but otherwise was perfect. We used 8 hot dogs and turned the rest into traditional pretzels. They were also delish reheated the next day-you could taste the beer a bit more then. Will definitely become a football tailgating tradition!

Peanut Butter Cup Cookies

Reviewed: Sep. 23, 2012
I am in love! This recipe is so easy. I love that I can make the dough ahead of time, then just make up the cookies whenever we want fresh, hot cookies. I made half of them as described, but the other half, I took a shot glass, made an indentation in the cookie, then added a spoonful of Nutella! OMG! I liked those best. Yum!

Bacon Ranch Chicken Skewers

Reviewed: May 31, 2012
Yummy! Made exactly according to directions, other than I marinated the chicken for a bit longer. It was perfect! Tasty and delicious. Chicken was super tender. Slightly salty bacon provided a nice contrast to the sweeter ranch flavors. Would maybe add a bit more seasonings next time. Would definitely make again! 4 and 6 year olds loved it as well!

Schweinebraten Pork Roast

Reviewed: Apr. 29, 2012
Made this in my slow cooker and was VERY impressed. Had to substitute basil for marjoram because it was what was in the cabinet Meat was tender and tasty. Gravy made it to die for! My 4 and 6 year old ate it well, as did my husband! The fact that it took a total of about 5 minutes to put together made it a win-win. Will definitely make this again and again! Oh, and I used full flavor beer, Hofbrau Octoberfest, because again, it was what we had. The gravy had a fair bit of beer flavor, but the pork wasn't too much, hubby said maybe we should have marinated it in the beer first!

Momma's Wheat Germ Cookies

Reviewed: Apr. 16, 2012
Fantastic! My mother in law makes a good oatmeal chocolate chip recipe that is not very healthy. These were as good or better than that! (Even my husband agrees.) My only changes were that I used cranberries (because I had them) and added about 0.5 cup of chocolate chips. Baked at 325 for about 10 minutes in a convection oven. Crispy yet chewy. Fantastic!

Grilled Marinated Shrimp

Reviewed: Apr. 16, 2012
Made as directed, except that I used my food processor to chop the parsley and mix the sauce. Super tasty and quick. Very fresh flavors on the grill. My 6 year old son came up to me after, gave me a big hug, and said "Thanks Mom for cooking that great shrimp!" Served over soba noodles (because I wanted to get rid of them) and that was good, but would also be fantastic over rice or regular noodles or on its own. I have extra and will be making a shrimp sandwich for lunch later this week.

Colleen's Slow Cooker Jambalaya

Reviewed: Mar. 13, 2012
I was disappointed in this meal. The slow cooking seemed to make all the flavors meld together too much so you couldn't really distinguish between what was chicken or sausage. It was edible, but I won't be making it again.

Chicken Cordon Bleu II Baked

Reviewed: Dec. 4, 2011
I accidentally screwed this up, and it still turned out WONDERFULLY! First, I didn't pay enough attention when I pulled the chicken out of the freezer and accidentally grabbed tenderloins. I chopped the ham and added it to the pan. I also added dijon mustard and some lemon juice before I topped it with the swiss cheese and put it in the oven. It was honestly some of the most tender, succulent chicken I've ever made! GREAT recipe!!!

It's Chili by George!!

Reviewed: Oct. 30, 2011
Made some adjustments based on what I like, but it's a great basic recipe that allows for personal preferences. I added garlic with the beef/onions, used petite diced tomatoes, added black beans and a teaspoon of cocoa. I also doubled all of the spices, except chili powder and salt. Everyone liked it!

Southern Slow Cooker Mac and Cheese

Reviewed: Oct. 27, 2011
A good, easy recipe. I made a triple batch for a party for 30 people (was supposed to be 50-60) and it was good. I used 1/2 cheddar, 1/4 fontina, and 1/4 smoked gruyere. I'd do it again, but wouldn't used the smoked cheese. I didn't add eggs because I don't like the custard style. Got several compliments about how it was cheesy without being greasy. Nice for when you need a slow-cooker recipe.

Lunch-Box "Handwiches"

Reviewed: Oct. 1, 2011
I used taven ham from the deli department and sliced swiss cheese, which worked pretty well. I didn't fill it as much as I should have. Ended up cooking it for over 20 minutes and finally put it on broil in order to brown the tops. Took it to a tailgate and my 4 and 6 year olds liked it! My 6 year old ate 2! I like the versatility of this dish! Hubby was already figuring out other ideas like using pretzel dough!
