Simple Beef Short Ribs

Reviewed: Jan. 23, 2015
My husband really loved these; reminded him of what his mom used to make. They were a bit salty for me, so I will not add any extra salt next time. Easy & tasty; YUM

Turkey Pinwheel

Reviewed: Jan. 23, 2015
We really enjoyed this; it was a nice switch from regular meatloaf. I used fresh spinach instead of canned and added a small can of drained mushroom stems and pieces to the filling. My husband even wants me to make it again & he is not a big fan of ground turkey.

Pumpkin Puree

Reviewed: Oct. 7, 2013
I used these directions as a starting point, but was unable to cut my pumpkin in half in order to bake it. So, I parboiled it, whole, for about an hour. That softened the shell enough that I could cut it in half after it cooled. Then I seeded it. The pulp was somewhat softened so, after seeding it, I scooped the pulp into a bowl and pureed it with an immersion blender. My counter top blender is older and it was not up to the task of pureeing pumpkin.

Pumpkin Dessert

Reviewed: Oct. 7, 2013
This was delicious! Thank-you for sharing Bea. My husband thinks it is better than pumpkin pie and I have to agree. I did substitute fresh pumpkin puree for canned this time. I used low fat sweetened condensed milk instead of plain milk. I left out 1/2 the sugar and two of the egg yolks in the pumpkin part. It was nice and light and fluffy.

Delicious Gluten-Free Blueberry Corn Muffins

Reviewed: Jun. 11, 2013
My sister is on a special diet so our family is new to gluten free cooking. This recipe was delicious; my husband did not know it was gluten free until I told him. The texture is nice and light. The lemon zest and soured milk add to the layers of flavor. I had a request to add more berries, which I will do next time.

Oatmeal Banana Nut Bread

Reviewed: Oct. 1, 2012
This is very good moist bread. I like the added fiber from the oats, but they do not change the wonderful flavor. For an even healthier bread, substitute applesauce for 1/2 of the shortening.
