When I was a young mom with little ones under foot, I used to think there were only two ways to cook chicken. Skin on breasts bathed in melted butter, sprinkled with salt and pepper and baked in the oven, or skinless breasts on the grill. That's about all I knew. So much has changed since MORE

This is the first time (but not the last) I made a cake using cornmeal. Cornmeal adds a nice texture element that you don't usually find in a cake. The glaze is the perfect addition and the blueberry sauce sends it over the edge. This is one of those "must try it" recipes! :) MORE

Do you like Mexican food? I adore it, love it, and would eat it everyday if hubby would tolerate it. I found a magazine from Better Homes & Gardens, one of their special interest publications, called Ultimate Mexican. It's a collection of authentic recipes with some awesome photos of M MORE

I know the picture of this dish isn't that great, I blame the lighting in my kitchen and a late dinner that night. But I will tell you that you really must try this recipe! It's truly delicious and a definite keeper, one that's earned a spot in my permanent recipe collection. The flavors a MORE

Cookies! Chocolate chip to be exact. In a stick! How fun is that? While there are a few that don't care for chocolate chip cookies, you are pretty much guaranteed to bring home an empty plate if you bring some to a get together or party. That's where these cooke sticks went; to a pool party wh MORE

You can use fresh or frozen blueberries for this delicious coffee cake. This would be good with other types of berries as well, so use whatever you like. Whatever you do though, make sure you try this, it's wonderful! The drizzle isn't really necessary as the crumb topping is great too, bu MORE

Stir fry should be a food group, don't you think? i absolutely love it, but sometimes it can be hard to find recipes with the right sauce consistency. I've tried many recipes where the sauce is too thin, even if it does taste good. Chicken is bar none my favorite meat for a stir fry, and t MORE

It's always way more exciting when you create your own recipe, rather than following one from a cookbook or website. I've made a few, I can probably count them on two hands, but every time that I do I feel such a sense of accomplishment! I guess that shows I have a real love for cookin MORE

I'll be honest, I wasn't too sure how well this was going to come out. The pears I had were still hard, the kind you have to put into a brown paper bag for a few days before you can bite into them. However, I actually think that fact made this all the better. You can clearly see the diced MORE

This is one of my all time favorite dinners. It's quick, takes less than 30 minutes to put together, from start to finish, and the flavor is amazing. The marriage of olive oil and butter is a match made in culinary Heaven, in my opinion, and contributes greatly to the success of this dish. MORE

About Me
My favorite things to cook
I love baking, especially cookies and cakes. :) I love cooking too, but I like to experiment, which can occasionally mean take out! ;)
My favorite family cooking traditions
I grew up in the convenience food era. My parents were divorced and I was a latch key kid. There weren't a whole lot of home cooked meals in my childhood, but lots of packaged and frozen goods. I try to make dinner every night for my family, though sometimes it's take out due to sports activities, etc. I'm envious of those that have their grandmother's recipes, I don't have anything like that.
My cooking triumphs
i've created a few recipes of my own, one I even won a contest for :) I love experimenting and finding new ways to combine flavors. I feel triumphant every time I bring something to my neighbors, they always give me rave reviews!
My cooking tragedies
I try to prepare whatever I can early in the day, so that the hectic afternoon is less... well, hectic! I tend to be pretty frugal, so I'm always pantry diving. I also menu plan every week, it saves me from A) running to the store in the middle of the week and B) getting take out.
