Apricot Glazed Chicken

This reminded me of a lighter Sweet & Sour chicken with its tangy yet sweet flavor. Based on the reviews that criticized its "too sweet" flavor, I only used 1/2 cup of apricot preserves and found that it was just sweet enough. I could see using raspberry preserves with this or orange marmalade for a twist. I served this with rice and it was a hit! My husband will probably request this one again in the near future.

Buttery Soft Pretzels

These were great! They really do smell and taste like pretzels from a certain mall store. I spritzed a little Smart Balance butter-y spray on them after they'd been in the oven for about 7 minutes, which gave them a little extra flavor. This is a recipe I'll definitely make again--I'm sure it won't be long before my husband asks for another batch.

Oven Fried Chicken

Add a dash of Old Bay to give it a little extra zing, and you may have to melt 1.5 Tbs of butter to coat the chicken completely.

Tiramisu Layer Cake

This really tastes like regular Tiramisu! I didn't have any coffee liqueur, so I just substituted a little coffee, and this still came out tasting like my husband's favorite dessert without the fussiness or difficulty of tiramisu. I've already been asked to make this again.

Cheese Dip II - Vegetarian-friendly

To make this vegetarian-friendly for a party, I omitted the ground beef and the water, and this came out perfectly! My friends agreed that adding the taco seasoning gave this a little extra zing. It was nearly gone at the end of the evening.

Easy Lasagna II

Good lasagna! My husband, a very picky eater, commented that this is the best lasagna he's ever had. "It's not too ricotta-y," he said. This is easy (for lasagna, which is always messy for me) and very tasty. I may add a little garlic next time. I also substituted non-fat ricotta cheese for the cottage cheese, and it was still very tasty.

Ruth's Grandma's Pie Crust

Thanks to Ruth's Grandma, I won't buy another pie crust. Pie crusts scared me--they always seemed so difficult to make and I've failed a few times. Not only is this recipe simple, but it makes a darn good crust. A tip from my expert-baker mother-in-law: use very cold water (ice water) and don't handle the crust too much. That makes for a very flaky crust. This is a keeper. No more lousy processed pie crusts for me!

Rosemary Roasted Turkey

The first time I cooked a turkey, I was terrified. It seemed so daunting; how could I serve turkey to my friends and family, who were used to my mother-in-law's incredibly-moist, always-delicious turkey? Thank goodness I found this recipe. I followed the instructions (although I modified the cooking time since I was cooking a breast instead of a whole turkey per Butterball's instructions) and the turkey came out perfect. It was moist, flavorful and delicious.

Italian Bread Using a Bread Machine

Great bread! I also made the dough with my stand mixer and dough hook attachment and let the dough rise for about an hour near my oven. This bread is much better than the Italian bread I've bought in the stores! Its texture is perfect--soft with a chewy crust. I'll definitely make this one again.

Cocktail Meatballs

I made these for a party in a slow cooker, and most of them were gone by the end of the party. Like a few others, I "cheated" and used frozen store-bought meatballs in the interest of saving time. The sauce was flavorful and not too sweet.

Creamy Au Gratin Potatoes

This was excellent and very easy! I omitted most of the onion (my DH hates onion) and used fat free cheddar cheese and skim milk to make it somewhat healthier, and this was still delicious.

Annie's Fruit Salsa and Cinnamon Chips

This one's a winner! I added pineapple and watermelon to the mix and it was great. Didn't even need the sugar--it was sweet enough on its own. Will make this for our 4th of July picnic!
