Cocktail Meatballs

I made these for a party in a slow cooker, and most of them were gone by the end of the party. Like a few others, I "cheated" and used frozen store-bought meatballs in the interest of saving time. The sauce was flavorful and not too sweet.

Cheese Dip II - Vegetarian-friendly

To make this vegetarian-friendly for a party, I omitted the ground beef and the water, and this came out perfectly! My friends agreed that adding the taco seasoning gave this a little extra zing. It was nearly gone at the end of the evening.

Ruth's Grandma's Pie Crust

Thanks to Ruth's Grandma, I won't buy another pie crust. Pie crusts scared me--they always seemed so difficult to make and I've failed a few times. Not only is this recipe simple, but it makes a darn good crust. A tip from my expert-baker mother-in-law: use very cold water (ice water) and don't handle the crust too much. That makes for a very flaky crust. This is a keeper. No more lousy processed pie crusts for me!

Fluffy Pancakes

These don't last long in our house! Very easy to throw together. I use buttermilk instead of "soured milk" and these come out perfect every time.

Too Much Chocolate Cake

Wow--the name says it all! If you're a serious chocolate lover (like my husband), this is fantastic. For others it might be... well... too much. :) Overall this was pretty good and I'll make it again for my chocoholic friends.

Microwave Baked Potato

This is super easy. Thank you to the reviewer who suggested that you put the potatoes in a paper bag before cooking--I'd agree that it helped the steaming process. Will do this one again!

Key Lime Pie VII

This is very easy and tastes as good as any other key lime pie that I've ever had! Like some other reviewers, I found that the recipe as written makes more filling than you need--next time I'll only use 2 cups of condensed milk. The ONLY thing that keeps this from being a five star recipe. Overall, though, this is great.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

This got mixed reviews from the family. While I loved the cookie dough/cake combination, my husband thought that the cookie dough flavor overpowered the cake, a guest said that it was "interesting," and my two year old demanded more. On a very random note, I threw a few leftover frozen dough balls onto a cookie sheet and baked them for 10 minutes at 350 deg--they were probably the best chocolate chip cookies that I've ever made.

Creamy Au Gratin Potatoes

This was excellent and very easy! I omitted most of the onion (my DH hates onion) and used fat free cheddar cheese and skim milk to make it somewhat healthier, and this was still delicious.

Rosemary Roasted Turkey

The first time I cooked a turkey, I was terrified. It seemed so daunting; how could I serve turkey to my friends and family, who were used to my mother-in-law's incredibly-moist, always-delicious turkey? Thank goodness I found this recipe. I followed the instructions (although I modified the cooking time since I was cooking a breast instead of a whole turkey per Butterball's instructions) and the turkey came out perfect. It was moist, flavorful and delicious.

Swedish Meatballs I

This is a good easy weeknight dinner! To make it a little easier even, I used store-bought turkey meatballs. Since my husband HATES anything mushroom, I used two cans of low-sodium Cream of Chicken soup. It's very easy and this recipe came in handy when my father-in-law popped in unexpectedly for dinner. These meatballs, with a side of egg noodles, is a delicious quick meal.
