Best Carrot Cake Ever

Absolutely delicious! Followed the recipe exactly with one exception; I poured the batter into three 9" pans to make a 3 layer cake. Turned out perfectly.

Sorry - Made this recipe as stated. Much too sour/tart/bitter? for my family's taste. I added more sugar, and while it was better, we just didn't care for it.

Delicious. Made all of the dressing, but only used 1/2 when I tossed it in with the beans and veggies. For my family's tastes, it was a good choice - perfect amount. Thanks for the recipe, will be making it again.

Peach Ice Cream

Absolutely delicious! I had very juicy peaches. I was worried the ice cream would come out runny, but it didn't. Followed the recipe exactly. It was a bit too sweet, but heck, it's ice cream - we enjoyed it! NOTE: Homemade icecream is always very soft right after making it. Even 2-3 hours isn't enough to firm it up. Best if it is stored in an air-tight container overnight for best (more firm) results!

Marinated Barbequed Vegetables

Recipe was good, but I have others that are much better, so I will not use this one again. Made as directed. The lemon flavor was a bit overpowering and the marinade definiely needed salt and pepper.

Simple Pasta Salad

Served for large family dinner last night. Everyone gave it 4 stars. Very good salad. Made as directed. Next time I make it (which I will), I will leave out the cheese or choose another "chunkier" kind (parmesan isn't quite right) and cut the dressing by 1/3 - 1/2. Very good recipe though!

ABSOLUTELY OUTSTANDING! Used 6" flour tortillas cut into 6ths. Brushed both sides with butter before sprinkling the cinnamon sugar on top.

Meredith's Cheesecake

Followed the directions with no changes made. The cheesecake while baking, unfortunately overflowed quite a bit - drippings everywhere on the bottom of my oven. It settled back down though. AFter baking, the top of the cheesecake cracked quite a bit. The taste was quite good, but there are better.

Mum's Irish Apple Pie

Actually, the pie overall for me was 2 stars... less than average. But, after a family vote, we gave it 3 because the problem that I had was that I put the pie in my 350 degree oven for 40 minutes (it's a true 350 degrees, as I have three thermometers inside the oven checking)... and the top of the pie burnt to a crisp. This wouldn't have happened, if I had been checking on it - not the recipe's fault - all mine. If you make this recipe, be sure to start checking after 30 minutes. The rest of the pie was absolutely fine, including the sides and bottom crust. The filling was a bit too tart for our taste (I would use maybe pink lady next time). So, we rated it better than average, but there are other apple pies better suited for my family's taste buds.
