Texas Hash

Reviewed: Jul. 27, 2009
This was very good. I used 1/4 each of red, yellow, orange and green bell peppers. I thought the black beans sounded like a good idea but I didn't have any and used a can of pinto beans with jalapenos instead. I don't care for processed american cheese so I used cojack. I'm about to have a serving of the left overs right now, yummy!

Chocolate Banana Smoothie

Reviewed: Aug. 11, 2009
I made a double recipe using two frozen bananas and only four ice cubes with my two cups skim milk. I used four tablespoons of Hershey's Special Dark syrup, yummy stuff! I also used four tablespoons of wheat germ as I do in all my smoothies.

Classic Peanut Butter Cookies

Reviewed: Jul. 23, 2009
Great tasting dough, we also were lucky that any got cooked. I used Peter Pan Honey Roasted Crunchy. Also added 1tsp of vanilla. I like them fresh baked but friends I gave some to a week later said they were fantastic. I did not increase flour or peanut butter, just put them in the fridge for a while. I don't roll mine into balls, instead used the medium sized PC scoop, they baked up almost perfectly round, very nice.

Fluffy Scrambled Eggs

Reviewed: Jun. 10, 2009
I've always added milk to my eggs, but not this much and usually skim milk. Adding this much milk made a big difference on the fluffiness. I did use evaporated milk. My boyfriend and I like lots of spice so I added garlic powder, pepper, cumin and a splash of tobasco and worcestershire. My only complaint was that eight eggs DO NOT cook in four minutes on medium low heat (unless you like them raw), more like 20 minutes. I started them sooner in the meal the next time.

The Best Chicken Fried Steak

Reviewed: May 30, 2009
My first time ever making chicken fried steak and it turned out very well with this recipe. I used round steak and seasoned it as others suggested. I made 12 pieces of steak so I increased the amount of seasoning but otherwise followed the recipe as written. Thank you!

Egg and Sausage Casserole

Reviewed: Jun. 25, 2009
Fantastic recipe that allows for everyone to make their personal preference adjustments. Here is what I did. I used 10 eggs, a 5 oz can of evaporated milk, 2 cups shredded pepper jack, 2 cups shredded extra sharp cheddar, 1 lb hot sausage, 1 red bell pepper, 1 onion, 1 14 oz can Rotel original, pepper, garlic powder and oregano. After cooking the sausage I removed it to drain and cooked the finely chopped red pepper and onion in the sausage remains with pepper, garlic powder and oregano (I don't measure seasonings) then added the Rotel and heated and then added the sausage back in heated all together. Mixed the eggs, milk, cheese together and added in the sausage mixture. I baked the crescent dough for 8 minutes in my 9x13 PC stoneware dish at 350 then added the sausage and egg mixture. I baked it for 30 minutes, turning it down to 325 after the first 10. It was perfectly done (I can't stomach under cooked eggs) and the eggs set great. We love cheese and may even use more next time. My boyfriend and I loved it. We ate 2/3 of it that night and finished it the next day for lunch.

Best Beef and Broccoli

Reviewed: Jun. 10, 2009
I made this as directed with the addition of more spices. I added garlic powder as some others suggested and lots of pepper. I only added a tiny bit of salt (garlic salt) and I used low sodium soy sauce but it was still too salty for my boyfriend. I ate mine over rice (he doesn't eat rice or pasta) and it didn't taste as salty. We will certainly make this again. When I first found the recipe I didn't have soy sauce and considered using worcestershire so I was thankful for the reviewer who said that was not a good substitute.
