Emily's Easy Sausage and Spicy Tomato Dip

Reviewed: Jun. 4, 2011
I ran out of ideas with all of the sausage I was collecting in my freezer. I came across this one and I tried a bite but being lacto intolerant- I handed over the rest to the bf and his guy friends. they loved it! I used hot italian sausage.

Mango Salsa

Reviewed: Oct. 24, 2011
This was so delicious! I did add just a bit of hot pepper flakes (to my portion only) and it was so good. No matter what it went well with everything! Some items I served this with were rice, with chicken tacos, with sea bass. with just some tortilla.

Vegan Mexican Stew

Reviewed: Jan. 9, 2012
I uploaded a picture. The bf is kind of skeptical of foods that do not involve meat, but he was convinced this was possibly the best he ever had. I kept all quantities, just changed the way they were fullfilled: 2.5 cups of chicken broth (had open from earlier in week) 2 cups of water/ 2 chicken bullion cubes nearly 1 tbls chili powder nearly 1 tbls cumin 14 oz hominy (was not sure if he liked it- so didnt want to stress the hominy) 14 oz frozen corn (to balance with hominy) 14 oz tomatoes with green chili (bf cannot do too much heat) 28 oz canned diced tomatoes (plain?) only used 2 pots! boiled potatoes, carrots, celery in sea salted water. drained. same pot boiled broth/bouillon. At same time started the onion et al in enameled cast iron. combined all in that pot and simmered. DIVINE

Asiago Sun-Dried Tomato Pasta

Reviewed: Feb. 19, 2012
Oh-So-Good! I followed other suggestions and used 2% milk entirely. I added tons of fresh grated asiago. I buy my sun-dried tomatoes dry, so I mwaved a bunch for about 30 seconds, covered, in evoo. I skipped butter, instead rendering in bacon fat. I only use thick cut butcher bacon. I skipped the chicken. I also used with 100% wheat penne (no durum or semolina wheat)

Chicken & Shrimp Jambalaya

Reviewed: Jan. 9, 2012
Fantastic. Added the shrimp last possible second. We ate all the shrimp that night. (shrimp does not reheat well) By the third day the stew finally soaked up all the liquid. Very good.

Parmesan Sage Pork Chops

Reviewed: Feb. 17, 2012
Perfect. I used leftover bread from Panera (why do they give bagets with sandwiches?) and grated it for bread crumbs. I also tripled the sage (I use albanian rubbed sage and it is divine). I used a nice rind of asiago instead of parmesan. Still was wonderful.

Island Kielbasa in a Slow Cooker

Reviewed: Jun. 22, 2011
RE-REVIEW. So this time around I am caring what I eat. So I skipped the brown sugar entirely, subbing agave nectar. I would suggest adding it to suit tastes. I would not sub 2 cups or even 1 cup! I added steamed carrots and green peppers. ORIGINAL REVIEW I did cut the ketchup and sugar down as suggested. I had 2 lbs of kielbasa and to my dismay, it was so tasty, between the two of us- 2 lbs was not enough! I made with white rice.

Baking some Bacon

of course it is 5 stars. Not sure how well it would work with "grocery store" bacon. I use butcher store bacon (thick cut peppered)

I love pineapple and I love salsa. This is divine over fish, as a side with plain rice, over plain salad. Simple and delicious.

Marzetti® Hawaiian Slaw

I needed more Hawaiian flavor so I added some coconut extract (left from a delicious coconut cupcake recipe) and then it was perfect. It just needed a bit more of something.

French Breakfast Muffins

Reviewed: May 8, 2011
When reading the recipe and looking at the picture, I thought it would be really sweet- more like a dessert than a muffin. I just bit into my first one and the texture is thick like a breakfast scone or biscuit. The top with a little bit of butter and cinni-sugar gives it a small crunch on the top of my mouth. I am very pleased.
