Swedish Meatballs (Svenska Kottbullar)

This recipe is wonderful. I made the mistake of using 1/4 c. brown sugar (not sure HOW that happened, but it did) and my family STILL loved them. Definitely a keeper.

Asian Ginger Dressing

This was great! I didn't have any fresh garlic or ginger, so I substituted powered for both. It worked great for our night of salad and stir fry.

Marinade for Chicken

Positively wonderful. We eat a lot of chicken and this recipe makes a very flavorful meal. I ended up using the full recipe to the detail but ended up adding twice the amount of chicken because there was SO MUCH marinade. My family all loved it! So no complaints from them equals no complaints from me! Plus the chicken was great as an addition to my salad the next day.

Best Brownies

Tex-Mex Chicken

I used black beans for more flavor instead of pintos, but this gets 4 stars for being SO easy. Anything easy and tasty gets automatically 4 stars from me! ;) Also, I used frozen corn IN the mixture and cooked it all together. This is a permanent fixture in my bi-weekly menu planning.

I made this for our Mom's Night Out, which was held at my house, and this recipe was out of this WORLD! I love Greek, who doesn't? I have to say that this recipe really wowed and impressed the other moms. I made it EXACTLY as it is written, and I wouldn't change a thing! This was so easy to do, I'm making this a regular recipe in my repertoire. Thank you soooo much Abby!

Beef Tamales

After living in PHoenix for 3 years, my husband begged me to try tamales this year. I must say, this recipe is far better than good. I read a couple of recipes, so I wandered a little from this recipe. I used the Ancho chiles, but also used 4 oz. of the New Mexico chiles. Plus I used 1 BULB of garlic for the meat preparation, as well as 1 BULB of garlic in the chile preparation. As for the chile preparation, I used a totally different method, which took far less effort. I removed stems and seeds. Then placed all chiles in stock pot with enough water to just cover them. I boiled them for about 30 minutes with 1/2 sliced onion, cumin, garlic, oregano, and white vinegar. I let this cool slightly, and then placed chiles and 2 ladles of chile broth into a blender. Blend on high for about 1 min. until thoroughly liquified. I had to do this in batches. Then I poured blended mixture into large bowl, and stirred once all of the chiles and juice were blended to incorporate it all together. This was WONDERFUL! Note that chile mixture will be slightly bitter, but flavors of the meat and the sweetness of the masa balanced this all out in the end. I cannot tell you how pleased I was with this outcome. BEST tamales ever made!!!

Balsamic Chicken

Chicken with a kick! Oh how chicken can seem so bland and monotonous, BUT this chicken was delightful, tasty and a definite repeater! I followed the recipe to the "t" and loved it. Even hubby liked, which I was sure he would not because of the "Balsamic" addition.

Banana Blueberry Muffins

WOW! I am so pleased to finally have a recipe that is both healthy and GOOD! I love that it used ALL wheat flour and NO oil. YUM! both of my kids LOVED it, and my husband said it was okay (he's really got a sweet tooth, so for him I'd have to add 1 cup of brown sugar to please). The only thing is that I altered it a little. I added 1/2 cup of 2%milk because my bananas were ripe, but not slimy ripe (which is what I usually use) and my batter was more like dough and not at all muffin-like. It is a total repeat recipe that I will be using again and again for my family. I even feel confident that this will be in my "Crowd Pleaser" collection. THANK YOU!

Seven Layer Dip II

I love that this is such a good dip for any time of the year. I altered it a little, but only because I know what I like and don't. Dip is also good to keep around the house with some tortilla chips in case any guests show up. FABULOUS!
