About this Cook
I have always loved to experiment while cooking. Most of the time, I will take several recipes and combine them into my own custom version. In the past few years, I have been making more healthy meals, therefore, I have to find substitutes for many ingredients and have had fun doing that. My husband says that he can't tell the difference in the taste....Now THAT makes me happy!

Barbie's Tuna Salad
WONDERFUL change from my norm that consists only of tuna, mayo, pickles, boiled eggs, and pepper. I used 2 5oz cans albacore tuna (drained very well), 3 Tbsp mayo w/ olive oil, 2 Tbsp sweet relish, and just a few dashes of each spice. Also added a couple chopped boiled eggs and a few dashes paprika. Great combination! Served on Melba toast. Note: I didn't know whether to use grated or shredded Parmesan cheese so I decided not to add it at all, which helped out with the calorie/fat count too! I will forever use this as a base. AWESOME recipe! Thanks for sharing!

Healthier World's Best Lasagna
Great recipe! I used turkey Italian sausage in place of regular sausage, low-fat ricotta cheese, and wheat noodles. Also added fresh spinach and finely grated carrots into the mix.

Marinade for Chicken
This is most definitely our go to marinade for chicken. Love it! I do not add salt, however, as there is plenty in some of the other ingredients. Also, I scale down on all of the ingredients including only using 1/2 cup canola oil instead of the 1 1/2 cups vegetable oil. That's probably because we normally only marinade 2-4 large boneless, skinless breasts. Thanks Jillypooh, for this great recipe!
