Roast Sticky Chicken-Rotisserie Style

This is a great recipe! I have used it time-and-time again. I didn't have white pepper, so my 12 yr old son who made the rub used 1/2 teaspoon red pepper flakes instead. A whole teaspoon of black pepper and a whole teaspoon of garlic powder. I also added a scant teaspoon of white sugar to the mix. We like it sweet and spicy.

Triple Dipped Fried Chicken

This makes amazing fried chicken. It is well worth the mess and the work. I used two ziplock baggies for the flour and the batter. Worked great! I fried it in my electric skillet.

Chicken Fiesta Salad

This time I cooked my chicken in the crockpot with some left-over juices and the packet of fajita seasoning. I love this recipe, it is so easy a husband can make it on a buy school night. I make it all summer long. I use green onion because my oldest son is alergic to white. I am also going to add cilantro to my salad mix this time. I am going to add some diced avocado and jalapeno on the side.

Supreme Strawberry Topping

Terry's Texas Pinto Beans

Excellent! I make these at least twice a month or more. My family loves them. The only thing I do different is to add an 8 oz can of spicy tomato sauce, just to suit our taste. UPDATE: I don't soak my beans overnight, I put them in a pan of boiling water, then I let them boil for 10 minutes with a lid on, then I turn off the heat and let them sit for an hour with the lid on. I then dump them and rinse them and make them.

Hawaiian Chicken Kabobs

WAIT! STOP! do not drain the pineapple juice, put it into the marinade. I did use fresh garlic and ginger. My husband said this was great! Better than El Pollo Loco! I made this with Legs and thighs. I marinaded them for only 2 hours and they were great. I did season them with French fry seasoning after I took them out of the marinade.

Meatball Sandwich

These are always a winner with my whole family. I always make them small and server them on hot dog buns. I mince onion, slice olives and shred mozzerella for the most amazing toppings. Perfect!

Zesty Cheese Soup

Update: I used ground turkey instead of the canned chicken in it this time. EXCELLENT! This soup is great...I made it for your youth group Christmas party and everyone loved it. One of the mom's even asked for the recipe. I made it in the crock pot. I started it early in the morning on high. I added the cheese around 4 and turned it down to low. By 6 it was done. I will make this over and over again.
