Slow-Cooked German Short Ribs

Reviewed: Oct. 16, 2006
Made this twice. Once for grandchildren (5 yrs and 11 yrs) they loved it and made it again for adult guests and success again. We used more meat than it called for and it was almost gone both times.

Healthy Mexican Chicken Bake

Reviewed: Jan. 22, 2014
We made a this and put it in the freezer for a ready meal.. We used Sweetfire Salsa from Benton Harbor MI. Followed it exactly. Last night we got home from a trip and decided to thaw enough for the two of us (one breast) and had it with a salad. Poured some extra sauce on the chicken and immediately clicked it into our favorites. Can’t wat to have company and make it for them. Nice to have such a great make-ahead meal that freezes so well. Thanks Joy!

We make it often and love it. One day we did not have breadcrumbs so I used Almond Meal from Trader Joes. Was good that way too.

Szechwan Shrimp

Reviewed: Jan. 26, 2014
I bought some huge shrimp, maybe they were prawns They were cooked, but I had to shell them. It wasn't as hard as I expected. WOW! Was it worth it. I used a tad less of the pepper flakes because my wife was afraid it would be too spicy. I think either way it would be fine. What delicious flavor. My wife and I both felt the shrimp were just fantastic. Just salad on the side and we had a nice meal.

Beef Barley Vegetable Soup

Reviewed: Jan. 27, 2014
This was great! We used a 3 lb chuck roast, trimmed some fat and cut into cubes. Not real small. Doubled the barley because I love barley. We did put everything in the slow cooker (10 hours) except the barley right from the start. Added the barley with about 45 minutes to go and stired the stew at that time. I used broth and didnt have enough so i put in some chicken broth. We had spagetti squash parmisian as the vegetable . That slow cooker is great. I never would have done this on the stove!

Grandma's Chicken Chardon

Reviewed: Aug. 31, 2009
This was fantastic, even though I made a couple of mistakes. I forgot the Parm and Parsley. Used Honey Panko Japanese Bread crumbs I had left from another meal. Followed advice to double garlic, butter (smart balance margarine)and lemon juice. We loved it, but next time I will try to do it correctly.

Mini Frittatas

Reviewed: Apr. 13, 2013
My wife and I liked these very much. Unfortunatly, I did not have cumin and forgot the black pepper, but they were still very good. Did not use salsa cause I did not see where it went but we did not miss it. I'll do it again with the cumin and black pepper then decide which way to prepare it for guests.

Slow Cooker Quinoa Sweet Potato Chicken

Reviewed: Feb. 1, 2014
I don’t know why we made this because I did not expect to like it. I waned something with Quinoa, I guess. It was a surprise for both of us, WE LOVED IT! I used canned chicken from Costco and just dumped everything in the slow cooker for 8 hours. I did put it on high for about the first 1/2 hour. It is just the two of us but we always make a full receipe and freeze the rest in 2-meal sized containers. We are having it for dinner avain tonight. Thanks for a delicious dinner.

Peanut Noodles

We liked it very much. Next time I will get sesame oil. I used 1 T of Olive and 1 T of roasted sesame seeds. I wanted to keep the czarbs down so instead of Noodles I used Quinoa and mixed it with the sauce. Used Splenda instead of sugar.

Delicious Black Bean Burritos

Reviewed: Oct. 21, 2009
I did not expect to like it that much but did not know what else to have. I left out the Jalapino and cilantro because of my wife's preference but we both loved them. One receipe (15 oz can) filled the two tortillos so we used a knife and fork. Marge added sour cream to her's, I ate mine as is. We both loved them. Thanks for something new and delicious for us.

Marinated Ranch Broiled Chicken

I usually follow receipes exactly, but I did not have the right ingredients. I had frozen chicken breasts, which I did not thaw, Safeway Onion soup and Dip Mix, Balsamic Vinigar. I just followed the procedure and marinated the food all day and it was terrific.
