Chicken Marsala

Reviewed: Oct. 6, 2012
This was wonderfull. We used a lot more mushrooms, marsala and dry sherry, (we never use cooking wine) then thickened the sauce a bit. I used more chicken too, but there were no leftovers :-( Thanks for a terrific and easy meal. Foolproof.

Beef and Mushroom Stroganoff, Aussie Style

Reviewed: Dec. 2, 2011
Everything tasted good, but the meat was tough. I must have cut the strips too thick. We used Half & Half and light sour cream. Next time I might do the recipe as written and my wife thinks we should use a more tender cut of meat.

Baked Chicken Amandine

Reviewed: Nov. 30, 2011
Great taste. Pretty rich, but we finished it. Did not change anything except we made half a recipe, forgot to precook the chicken and so left it in the oven a bit longer.

Beef Peach Pie

Reviewed: Jun. 8, 2011
We made this several times and it was as a big hit each time. The first time I used fresh Red Haven peaches, and when they are in season, that is the way to go. The peaches were a bit hard and that was great. In the winter we use canned peaches and that is almost as good. 5 stars either way.

My wife and I loved this and it was very easy. Only change is that I am not permitted flour on my diet so I used Almond Meal from Trader Joes.

Spinach Enchiladas Verde

Reviewed: Oct. 15, 2010
We thought it was terrific. One problem. The corn tortillas broke when we tried to roll them. My granddaughter suggested that the next time we should moisten the tortillias by wrapping them in a damp dish towel, or perhaps they were not fresh enough. Definitly it is easy, delicious and we will make them again soon.

I usually follow receipes exactly, but I did not have the right ingredients. I had frozen chicken breasts, which I did not thaw, Safeway Onion soup and Dip Mix, Balsamic Vinigar. I just followed the procedure and marinated the food all day and it was terrific.
