Sour Cream Chicken Enchiladas

I used light sour cream, 2% cheese and corn tortillas and this was WONDERFUL. I Cooked the tortillas in a nonstick pan with Pam for about a minute per side. This keeps the tortillas for getting soggy. I will be making this over and over

G's Steak Marinade for stir fry

Wow!!! this was wonderful (a little salty, but that is fine with me). we used a flat iron steak and it turned out sooooo tender and moist. i made it per the recipe (which I like to do the first time), but I think i will add a little red wine next time to cut the saltiness, but it is wonderful as-is.

Pork and Pepper Stir Fry

the only change i made was used 2 Tbs Olive oil and 1/2 Tbs Sesame oil in marinade and added 2 Tbs Tamari (good Soy sauce). and 2 Tbs instead of 5 in the stir Fry. Very Very good Will make often!!

Firecracker Grilled Alaska Salmon

I thought this was very good and a change from the maple salmon that we usually make. I will say the marinade almost overpowered the salmon, but I guess that is a matter of taste. i still prefer the maple salmon

Broiled Tilapia Parmesan

This was wonderful!! I decreased the Mayo to 1.5 Tbs (used Light) and the butter to 2 Tbs (used I can't believe it's not butter Light). This made it a little healthier and it was soooo good.

Maple Salmon

This was WONDERFUL!!! My husband does not even like salmon and he loved it. I added a teaspoon of ginger, but I think it would have been wonderful without it. I used pure maple syrup, so I am not sure how it would taste with artificial.

Glazed Meatloaf II

This was wonderful. I doubled the glaze for leftovers and it was perfect. I also added 1 can of sliced portabello mushrooms and 1 Tbs of Worscheter. I am not a big meatloaf fan, but i loved this one. I used 93% lean beef and it was still moist!

Fish in Foil

This was wonderful, but I added 1/2 of dry white wine and used fresh garlic instead of the garlic salt. I also used Mahi Mahi instead of trout. My husband and I loved it

Slow Cooker Pork Chops

This was WONDERFUL. I actually marinated it in the sour kraut and 1/2 can of beer and the baked it in the oven. it was sooo tender and EASY. My husband loved it also.

Black Bean and Salsa Soup

I did change this a little, but loved it!! I used 3 cans of beans and Mexican rotel instead of broth. Also, I added a fresh jalapeno. I blended everything very well - leaving out one can of beans. I simmered it after adding the can of beans. the full beans adds good texture and the rotel and jalapeno add an added kick!!
