Grain and Nut Whole Wheat Pancakes
I've followed this recipe as it is written and I have played around with different nut milks and egg replacer to make this vegan. A huge hit, every time! They freeze well, too. I live by the beach in southern California, and thought that this might influence the texture of the pancakes, but I am consistently pleased with the results.

Oriental Cold Noodle Salad
This is SO good! My boyfriend says it is one of the best things I make, and he wants it at least once every 10 days. My additions were simply some fresh grated ginger and some minced scallions. But, here's my secret: if you really want to change the recipe, focus on the quality of the soba. Unfortunately, most dry soba has only a teeny amount of buckwheat. Although soba recipes call for a buckwheat: wheat ratio of 4:1, a lot of commercial soba is the reverse 1:4. So, try to find soba with more buckwheat than wheat. Or, make your own, and then you can get the ratio just right. It is so incredibly easy to make soba, you won't believe it. There are plenty of instructions online. I like the instructions from the LA Times, bc it includes photos.

Wheatberry Waldorf Salad
Fantastic: beautiful, tasty, and nutritious. I was really satisfied with a wheat berry salad recipe by chef Ellie Krieger, but this recipe is superior due to the dressing. However, I do include a couple of elements from chef Krieger's recipe. I add 2 stalks of celery and 1 scallion, both finely chopped. Also, if you can't find pomegranate seeds, consider substituting dried *tart* cherries, such as Montmorency cherries. They're not the same, but the salad really benefits from tartness, so try to keep that element as part of the dish, one way or another.
