I cooked 25 lbs. I used the season packets that comes with the cornedbeef. Rubbed the meat let it cook in a roasting pan with a 2 cups of water. after 4 hrs I emptied the fat and juices on the bottom after pouring over the meat.
After 4 1/2 hrs I added the apricot preserves and mixed with just enough juice to make it pourable to glaze all of the meat. Let cook for another 1 1/2 and repeated the process with more apricot mixture
