Kale and Quinoa with Creole Seasoning

This recipe is amazing and quick! I replaced the chicken broth with vegetable broth to make it vegetarian. My kids even ate it!

Spiced Quinoa

This quinoa dish is delicious! It's quick, easy and great to pair with a moroccan spiced shrimp or lamb! I use a pre-made moroccan spice to make it even quicker! You can add apricots, raisins, dates or other dried fruit and I always add a little sauteed kale or spinach so my kids get veggies in. It's a very versatile recipe!
