In South Africa the word for barbecue is "Braai". I wish that my Dad could have been on this trip because we've always joked that he is King of the Grill. These braais are huge, and made by forming bricks and cement up to three feet above the ground, and then hollowing out the center for coals. Then the large pole (with swinging grate attached)is stuck into the cement. The meat smokes for hours above the coals and/or wood. By the way, when you get to South Africa you should know that a braai is best enjoyed under the stars and with lots of singing of South African freedom songs!
