Rosemary Roasted Butternut Squash

This is so simple and was incredibly delicious. The butternut squash actually tasted rather sweet and my husband thought that it was sweet potatoes. The fresh rosemary really gives this dish an extra kick.

Jerk Chicken Wings

Wow! These are absolutely amazing! I made them exactly as written with the exception of using jalapenos instead of habaneros. I also used 4 instead of 3 since I was using peppers with less heat. I do not have a huge tolerance for spicy food and these turned out great for me. The balance of flavor and spice was perfect. They also made the house smell fantastic while cooking. My husband couldn't quite raving about them (although he did say they could have a little more heat). Definitely give these a try.

Chef John's Salt Roasted Chicken

So simple and delicious. There is a ton of salt to this recipe and I did not get enough out of the pan before making the lemon sauce. I added just a touch of sugar and that evened out the saltiness nicely. The chicken itself was incredibly moist and delicious. This will definitely be made many, many times

Amish Slaw

Loved this vinegar based coleslaw. My husband is not a fan of mayonnaise based slaw recipes so I am always looking for a good one with a vinegar base. This is just the right amount of sweetness and tartness. It also keeps for a long time. Make at least a day ahead of time to let the flavors mix together.

Balsamic Bruschetta

Delicious Bruschetta! I sliced the french bread very thin then toasted it in a toaster oven. I also let the tomatoes sit and drain for about a half hour after dicing them. This seemed to help the bread from getting too soggy.

My Special Shrimp Scampi Florentine

As written, I agree with other reviewers, there is too much oil and butter. I cut way back on both of those (only used about 1/3-1/2 as much as called for) and it turned out perfectly that way. Very simple, quick meal to make and had rave reviews.

Roasted Beet, Peach and Goat Cheese Salad

Wow! I have never found a beet recipe I liked and this one was fantastic. All the different flavors worked so well together. I did cut the dressing in half and still didn't use it all. I think with the amount called for that would have been WAY too much for my taste. I also used sesame oil instead of walnut oil since that is what I had on hand and used green onions instead of shallots. This is definitely a keeper recipe!

I have made this recipe many, many times for different functions and it is always a hit. I only use one can of refried beans though because I don't like the beans to overpower the dish.

Moussaka

This was my first time cooking Greek food. I followed some other suggestions and added some whipped egg whites to the sauce. Please note that this took much longer than 45 minutes to prepare. I was fortunate to have help and it still took almost an hour and a half. The dish turned out fantastic but I doubt I will make again just because of the complexity. Obviously that is not a fault of the recipe just the nature of the dish.

Winter Lentil Vegetable Soup

This is a wonderful, easy, healthy recipe. I did find that it needed a little more salt and I also added a splash of hot sauce to give it a little kick. I served with crackers and even my meat-loving fiance loved it!

Tuna Salad With Fresh Dill

I really liked this but made a few tweaks that I felt brought it up to a five star recipe but since I am rating it as written I felt I had to give it a four. I upped the dijon mustard to a tablespoon and also added some lemon juice, salt and pepper. Those few minor changes made a huge difference and it was fantastic!

Garlic and Parmesan Chicken Wings

My fiancé is obsessed with wings. He wants to go out for them about once a week. After eating these he said he would never have to go out for wings again. They are absolutely incredible and was easier than I expected them to be. Will definitely be making these again in the near future

This is the best quiche recipe I have ever made. I made this for Christmas brunch and it was a huge hit. It takes more effort than a traditional recipe but is well worth it. This will be my go to recipe from now on.
