Italian Sausage Soup with Tortellini

This recipe was quite delicious. I used a mix of hot and mild sausage to give the dish a little more heat and I also added some kale in order to make it a little more nutritious. It was a huge hit with my husband and I so I will be making again in the near future.

Perfect Caprese Salad

Using fresh basil for this dish is a must. It really makes the salad taste summery and crisp. I didn't make any changes other than used black truffle oil instead of white (since that was all I had). I liked the hint of earthy taste that the truffle oil provided but be careful not to use to much as it can be overpowering. I served this with thinly cut French Bread.

Shrimp with Avocado and Mango Salsa

This was so good. I didn't make it in the pouch and added a little Old Bay to the shrimp before sauteing them on the stove. Other than chopping everything it is a really quick meal.

Rosemary Roasted Butternut Squash

This is so simple and was incredibly delicious. The butternut squash actually tasted rather sweet and my husband thought that it was sweet potatoes. The fresh rosemary really gives this dish an extra kick.

Jerk Chicken Wings

Wow! These are absolutely amazing! I made them exactly as written with the exception of using jalapenos instead of habaneros. I also used 4 instead of 3 since I was using peppers with less heat. I do not have a huge tolerance for spicy food and these turned out great for me. The balance of flavor and spice was perfect. They also made the house smell fantastic while cooking. My husband couldn't quite raving about them (although he did say they could have a little more heat). Definitely give these a try.

Chef John's Salt Roasted Chicken

So simple and delicious. There is a ton of salt to this recipe and I did not get enough out of the pan before making the lemon sauce. I added just a touch of sugar and that evened out the saltiness nicely. The chicken itself was incredibly moist and delicious. This will definitely be made many, many times

Amazing! Patrick couldn't stop eating it! I only used one small jalapeno, next time I may use two. No need to add extra salt (I added a little and it was a little salty)

Patrick loved this recipe but I am not a huge fan of the fish sauce. Without that I would really like it. Next time I will make and leave the fish sauce on the side for him. I will use soy instead

Amish Slaw

Loved this vinegar based coleslaw. My husband is not a fan of mayonnaise based slaw recipes so I am always looking for a good one with a vinegar base. This is just the right amount of sweetness and tartness. It also keeps for a long time. Make at least a day ahead of time to let the flavors mix together.

Balsamic Bruschetta

Delicious Bruschetta! I sliced the french bread very thin then toasted it in a toaster oven. I also let the tomatoes sit and drain for about a half hour after dicing them. This seemed to help the bread from getting too soggy.

I probably need to tweak this a bit. I didn't cook the zucchini long enough and it was still hard. I should add more tomatoes next time and it also needs more spice. Maybe oregano and more salt

My Special Shrimp Scampi Florentine

As written, I agree with other reviewers, there is too much oil and butter. I cut way back on both of those (only used about 1/3-1/2 as much as called for) and it turned out perfectly that way. Very simple, quick meal to make and had rave reviews.
