Gramma's Old Fashioned Chili Mac

Nice and sweet chili mac. Did anyone else notice the picture shown with this recipe has no celery but does have corn. Not quite accurate, but very delicious looking. I'm GF so I combined tomato sauce with corn starch and sugar to replace the soup. I also added corn (looks nicer and improves flavor)

Deconstructed Chicken Kiev

The first thing out of my husband's mouth was, "This is my favorite chicken recipe you've ever cooked." That's saying a lot after 24 years of cooking for him. This was much easier than trying to stuff a chicken breast.

Au Gratin Potatoes

I tried what some reviews suggested and mixed the sauce with the potatoes. The taste was fine, but the sauce spread out on the plate. This could be due to using potatoes that weren't fully thawed.,,not sure.

Quick and Easy Mexican Chicken

Due to lack of time, I choose not to brown my chicken. I was worried it would look funny...but the cheese covered it and it wasn't noticed. Really good easy meal.

Spanish Rice Bake

I couldn't wait to make this recipe from the second I saw it. It was really good. Next time I'll omit a little chili sauce and replace with Catsup (prefer taste). I accidentally added 1 tablespoon of brown sugar...a little too sweet that way. I also mixed in the cilantro and that tasted a little too strong. Despite all that, I enjoyed every bite.

Eggplant Supper Soup

I started making this meal but my hubby finished it while I took a child to the emergency room. Poor guy, I failed to mention that I prefer eggplant without the skin. The skin was too chewy...Soup is never as nice when you need to pick out an ingredient, The broth was really tasty. However, the kids only ate a small bowl and hubby commented that the cheese saved it. I won't fix this again.

Summer Chicken Salad

Most of my family enjoyed this meal (except the child that doesn't like pineapple or foods that are mixed together). It gets the 5 stars because my 13-year-old loved two things about it. First, it would be ready quickly for dinner and second, the taste. He had four servings. If I made it again, I'd add some celery and grapes. The addition of wild rice would also be a nice option.

Quinoa with Chickpeas and Tomatoes

Considering I really don't care for vegetarian meals - this one had real benefits...like weight loss. Slow eating and no seconds. Really, it was real tasty. When I make it again, I'll use black beans rather than chickpeas because I don't care for the texture of chickpeas. Black beans will also add a nice color. As another review suggested, I used cilantro rather than parsley.

Aloha Chicken

Our family loved this recipe. I chose to cut the chicken in bite-size pieces. I would quadruple the sauce the next time I make it. The best part is it's gluten-free (assuming you use gluten-free teriyaki sauce)
