Moroccan Lentil Soup

This was a really nice tasting soup - especially since I'm not the biggest lentil soup fan. Very nice flavor although a touch on the bland side. I made "harissa sauce" - a hot Moroccan condiment - from another site and added a bit to the soup. The soup went from good to great! I did not blend the soup at all since the lentils were already thickening the soup. And I think 1 to 1-1/2 hours is way too long to cook the soup. I had mine done in less than 30 minutes.

Zucchini Chocolate Orange Cake

I wasn't sure how my husband would like this cake - not usually his kind of thing - but he LOVED it. I was pleased with how moist it turned out and I loved the hint of orange flavor. The only substitutions I made were: applesauce for 2/3 of the butter, and Splenda for 3/4 of the sugar - just to make it a bit lower in calories. This is a wonderful cake - thanks for the recipe!

Roasted Red Pepper Lasagna

I thought this recipe was fabulous. It did take some time to prepare the peppers but it was worth it. Like another reviewer, I didn't think there were enough peppers so I added a small jar of roasted red peppers to the ones that I had prepared. The leftovers were wonderful for lunch the next day. I will definitely make this again.

Blackberry Spinach Salad

Very unique salad - nice combination of flavors and colors. Used almonds instead of walnuts and served with a balsamic dressing. Next time I will probably mix some romaine lettuce with the spinach, but I will definitely be making this again!

Pumpkin Spice Muffins

These muffins are really good! My modifications: Added 1/2 cup dried cranberries as one reviewer suggested, used Splenda instead of sugar, and used pumpkin pie spice instead of the combination of other spices. Delicious! I'm going to make another batch so I can use up the rest of the pumpkin - can't wait to have these for breakfast next week! I think I may add crystallized ginger this time.

White Pizza with Porcinis

I did not follow this recipe exactly since I used my own whole wheat pizza dough. But the combination of porcini mushrooms (I used the dried mushrooms which I rehydrated) and fontina cheese is wonderful. I have made this 3 times already - added chopped freshly steamed asparagus the last two times. Fresh herbs like tarragon and thyme are also delicious on this pizza. Thanks for the great pizza idea!!!

Roasted Red Pepper and Tomato Soup

I used what I thought was the equivalent amount of jarred roasted red pepper but I guess I didn't use enough because I couldn't taste it. But as a tomato soup, this is still a good recipe. I left out the butter and just mixed a little bit of soup into the flour and then added it back to the soup.

Garlic, Spinach, and Chickpea Soup

Really great soup! Added a little extra seasoning and substituted corn starch for the corn meal and skim milk for the heavy cream. I did not blend the soup at all. Turned out to be a thick and creamy soup. I can't wait to have the leftovers for lunch this week!

Lighter Banana Muffins

I was surprised by how well these turned out. They were moist and very tasty. Like other reviewers, I added cinnamon and nutmeg - as well as a pinch of ground cardomom. And I also substituted Splenda for sugar to make a lower calorie muffin. Since I made a half recipe, I used my convection toaster oven to bake them and it took only 10 minutes. THANKS FOR A GREAT RECIPE!

Wild Rice and Cheese Soup

Caribbean Sweet Potato Salad

I thought this was a really good recipe. I do not like mayo-based salads so this was a great potato salad. Nice flavor and goes very well with a Caribbean-themed menu as other reviewers have mentioned. I will make this again, especially since I overcooked the sweet potatoes just a bit the first time.

Grilled Poblano Pepper and Mango Quesadillas

This was a really good recipe - have already used it twice. Substituted goat cheese for the cream cheese both times and cooked the peppers a little before adding them to the quesadilla the second time. Very simple but very flavorful. Great with black bean soup!

Brazilian Black Bean Soup

This soup was really quick & easy... the orange juice gives the soup a nice flavor. It did need a bit more heat, so I added a bit of green Tabasco sauce. I will definitely add this to the recipes I make frequently.

French Onion Soup With Browned Garlic

Really good onion soup! LOVED THE GARLIC!!! My house smelled like onion & garlic for days (not necessarily a bad thing!)... I took the other reviewers' suggestions and only used 2 large onions - and that was plenty. I also used vegetarian "beef" broth (purchased at a health food store) instead of vegetable broth. I found another recipe that used fresh thyme in the onion soup recipe - maybe I'll try that next time. I will definitely make this recipe (with a few modifications) again.

Baba Ghanoush

I thought this was a really yummy & easy recipe! I made it so I would have something healthy to eat at a Superbowl party - turned out quite nicely. I roasted the garlic along with the eggplant and then doubled the amount of garlic - gave it a very nice flavor. Next time, I will char the eggplant (as is done traditionally) to give it a more smokey flavor - or add just a little bit of Liquid Smoke. Overall, a very nice recipe -- Thanks for sharing it!

Spicy Tomato and Lentil Soup

I have been trying lentil recipes laterly, and this is one of the easiest soups I have made - will definitely be making it again. I did substitute spanish oregano for the basil. Next time, I will try chopped chipotle pepper (smoked jalapeno in adobo sauce) instead of the chile pepper for a deeper, more smokey flavor. Thanks for a great recipe!
