Choctaw Catfish

This is delicious! I substituted olive oil for vegetable oil, Swai for catfish, and onion powder instead of onion salt. The fish was the best I have ever made.

I made this recipe exactly as stated. The taste of the muffins was great but I felt that they crumbled too easily so that is why the 4 star rating. Yummy! Next time I will try some of the substitutions mentioned by others as a healthier alternative.

Homestyle Turkey, the Michigander Way

Followed the recipe exactly. This turkey was moist, but I would have preferred a little more flavor to the meat itself. Next time I will add flavor the butter with herbs and place under the skin to give an added kick. Just gave 4 stars because the taste was not really anything spectacular.
