Duck; roast duck, smoked duck breast and duck confit. My favorite is my Christmas Cassoulet, I cook a loose Toulouse style with diced roast leg of lamb a garlic pork and lamb sausage and duck confit. My most requested dinner is wood fire Roast duck with the vegetables roasted in the dripping duck fat.
