Black Bean and Corn Quesadillas

I love the simplicity of this recipe. I think the Monterey Jack cheese makes this! I usually wouldn't cook Mexican with Monterey Jack cheese. I cooked mine in the oven as other's suggested with broiling for 2 to 3 minutes at the end for browning (don't forget to spray with non-stick cooking spray!) I doubled the salsa and did not add the in sugar at all. Mine made 9 healthy but small quesadillas. Thanks for the recipe!

Cajun Chicken

Wow this was good! Do not make the mistake of salting/adding pepper to the chicken prior to marinading as it doesn't need it. Also I more than halfed the amount of oil and only marinaded the chicken for barely 20 minutes and it turned out just fine. Great recipe!

Slow-Cooker Chicken Tortilla Soup

This was a five star recipe for me! I made as directed but did not precook the chicken, omitted the 2 cups of water and used 2 cans of chicken broth which I precooked and had on hand, also omitted the corn, torilla's and the black beans I wanted to add to cut down on the carbs... and VOILA!! Low Carb Chicken Tortilla Soup! I really like the fact that this did not call for a can of Campbells soup as they are so salty. Loved this recipe! Thank you!

Quick Peach Cobbler

I made this as directed and it was really good for a quick cobbler recipe which is what I was looking for. You definitely need a 9x9 inch pan! There was a perfect blend of cake and gooey goodness. Thank you!

Buffalo Chicken Dip

Really good! I discovered Neufchatel cheese...same great cream cheese taste but so much lighter in taste! I took the advise of another reviewer and layered the ingredients (cream cheese, chicken mixture and shredded cheese,) but I think I'll mix all of the ingredients together next time. Thanks for the recipe!

Spaghetti Squash I

Wow, this was great! I've never made spaghetti squash before and I thought I'd need to add some salt or other seasonings to the recipe but it was wonderful as is. I'd probably add a lot more tomato next time. Be sure not to go cheap on the feta cheese!

These were just ok...probably wouldn't make this again. You really do have to watch or they'll burn. I marinated them in the brown sugar overnight which dissolved quickly and pooled at one corner of the pan. I found they really weren't too time consuming to prepare.

Chicken Cordon Bleu II

Normally I agree with the reviews on this site after making the dish but I would not make this again. I followed the recipe exact and found it a lot of time an effort for minimal pay out. I suspect I cooked it too long (the recommended 30 minutes), as all my cheese melted out. There's no hint on how to keep all the cheese from melting out of the roll. I did not like the sauce in particular. This did not taste like what I remember as Chicken Cordon Bleu.

Campbell's® Slow-Cooker Chicken and Dumplings

I'm rating this with four stars since it was so incredibly easy and very good. I love to cook but after a long day at work it was so nice to have this waiting on us! I pretty much made this as directed but did add a can of peas (at the very end), a chicken boullion cube and quite a bit of garlic powder. The thyme was not overpowering to me at all. My only reason for not rating this with 5 stars is the trouble with the dumplings. I was afraid to try to cook them in the slow cooker and I did not want to wait an extra 30 to 40 minutes for them to cook so I took someone's advice and made them on this side with chicken broth. They just weren't that good however the chicken mixture is ok by itself. I will try the slow cooker next time for the dumplings... I will make this again due to the very easy preparation and really good taste. Just have to figure out the dumpling part!

Easy French Dip Sandwiches

This simple recipe was delicious!! I wasn't sure what beef consomme was but after some searching I found it in the Campbells soup section... beef consomme! I made it exactly as directed and it was a hit at our house!

Delicious Ham and Potato Soup

I made this recipe pretty much as directed and it was delicious! I added a bit more of the chopped ham than it called for and served it with shredded sharp cheddar cheese on top. I will definitely make this again!!

Aw-some Coleslaw

Really good! It tastes just like KFC if that's what you're looking for. The cabbage DOES need to be cut very small as others suggested. I've never cut up a head of cabbage for coleslaw before and found it to be very tedious so I left my pieces a bit larger... would have been better cut small. After I made this I remembered my mother using the blender to cut up cabbage for her coleslaw (way back when,) so I might try that. This was really good but I'm still looking for my perfect coleslaw recipe (I would make this again however.) Thanks for the post!

Honey Mustard Grilled Chicken

Wow, really good! Per the reviews, I used half of the honey and mayo required and it cooked up really well on the grill. I'm an amateur on the grill and always, always overcook the chicken but not this time! I'm not sure if it had anything to do with the marinade but I think it did! (I marinated the chicken for 1 1/2 hours.) I forgot to hold out some of the sauce for dipping so I made another batch and didn't have any left over. This is pretty mustardy but we really enjoyed it and will have it again and again! Thank you for the post!

Buffalo Chicken Wing Sauce

Really good! I needed a quick buffalo sauce for my chicken buffalo burgers (as I was too cheap to buy it,) so I looked it up on Allrecipes and made this on the fly. I didn't read any of the reviews as I normally would and made it exactly as written. It was a little thin and the color came out a weird pale orange so I wasn't sure... but it turned out great (and no separation issues)! I think the Worcestershire sauce really makes it. I'll definitely make this again. Thank you!

Mom's Easy Pea Salad

Yummy. Added red onion because you can't have pea salad without red onion! I would not make this with canned peas... I think thawed frozen peas work best. Also used a bag of shredded cheddar cheese which worked out well. The Miracle Whip (lite) makes this dish! Thanks for the post!

Grammy's Overnight Lasagna

Really good!! I didn't want to wait overnight so I soaked my noodles (just regular and not oven ready,) in hot water while I started the sauce (about 30 minutes.) I did as the others suggested and added an egg to the cottage cheese and vamped up the meat sauce with basil, mined garlic and onion. I used two 24 ounce jars of sauce and omitted the water which made two 8x9 dishes... one to eat and one to freeze. Next time I'll add some italian sausage. I never knew how easy making lasagna could be. Thanks for the recipe!!

Roasted Garlic Cauliflower

We loved this! A friend of mine told me to use a garlic press for the garlic (instead of using minced garlic,) and nothing on my dish scorched or burned at all. Next time I would skip the bag and make this in a bowl as I could never get all of the juicy bits out of the bag. Also I must have had a big head of cauliflower and could not use a casserole dish but used a large cookie sheet instead. For the cooking time, my same friend advised me to cook this in (3) 10 minute intervals, shaking or stiring up the cauliflower each time, adding the parmasan cheese in the last 10 minutes (I also cooked it quite close to the top of the oven just under the top rack at 450 degrees as stated...truely ROASTED CAULIFLOWER!!... not steamed at all, I did not cover this.) It couldn't have turned out more perfect. I'll be making this ALOT! Thank you!!
